Didn't I tell you my hubs shared his bug with me a few weeks ago? It's inevitable...we live with them. LOL

But when I made soup, at least I gave him a bowl of it too.  -_-

 

My trip to the produce stand yielded a treasure trove of things: pluots, tomatillos, eggplant, patty pan squash, cabbage and although it is too soon to bring one home just yet: pumpkins! 

 

Making grilled Meditteranean pork burgers tonight (damn, those are tasty things!) with a side of roasted patty pan squash.

 

Friday will be Green gazpacho with chili cumin shrimp 

 

Saturday will be Stuffed Cabbage rolls (Galumpkis as my Polish friends call them) in the KFG

 

Sunday Eggplant parmesan

 

Have a  good weekend everyone and.... let us never forget 9/11

I LOVE LOVE LOVE Pluots/plumcots.  I have always loved plums, but since the plumcots have been widely available, for a pretty long season in my area, I am eating them all the time.  Perfect combination of both fruits.

 

Last night I made tacos with beans... tonight I am probably just going to whip up some grilled chicken and whatever veggies I have on hand.  I treated myself with chik fil a and fries for lunch so need to be good for dinner!

Tonight I had a big juicy beef burger on an Udi's bun with some crunchy tator tots. Such a naughty yet satisfying meal.  :D

Good for you! A lady needs the iron from the beef! ( that's how I rationalize it ). Lol

We had some smoked meat in the freezer and we made sandwiches with lots of BBQ sauce and some Ore Ida oven fries.

It was heaven. I wish I had the energy for more spontaneous meals like this but usually default to grilled chicken, rice and veggies. I need to invest in a weekend day organize crock pot freezer meals.

Sounds like I'm not the only one who likes to splurge on Ore Ida stuff. ;)

 

I took the kids out to Fazoli's for spaghetti and breadsticks to get their gluten quotient in for the day and I pretty much had to live on peaches, peanut butter, and apple slices until my shopping trip was finished. As my daughter put it, "Mama, the only thing that you can eat here is their apple juice."  :lol:

 

So when I got home, I splurged and cooked up some Ore Ida tater tots in the waffle iron. I also heated up some Beyond Meat chicken free strips, lightly cooked broccoli, and leftover basmati rice. Mmm! So tasty and filling.

 

I got a couple of chocolate splurges today. I'm feeling slightly better. I'm managing to get out of bed a little at least, but I think I'm sticking to soup still for the day. Unfortunately this means making myself semi-presentable and dragging myself to the store or waiting til my husband comes home tonight to go for me but I'd rather just get my own. I've just been buying soup because I guess I'm lazy, and my husband doesn't like any of the type of soup I like so that's why I wasn't sharing. :P (Remember, he may be a grown man but acts like a toddler who thinks they're allergic to everything called a vegetable. :lol:)

 

Awesome news today though. His department manager transferred out of his department to try other things, the more departments you have experience in, the more likely you are to get higher in the management ranks at Walmart. He interviewed for the department she ended up getting, but we're perfectly happy for him to have been turned down for that. He got the department he's been working in since he started!  ^_^ We're both thrilled and excited. The only daunting thing is that both previous managers for his department worked from 6 to whenever. Oh God.... he'll have to leave for work at 5:30 in the morning. That's the less than exciting part, we're going to have to turn our schedules upside down and neither of us have ever been morning people. :unsure:

It's just me and the kids right now. Hubby is usually home on Fridays (works a 4 day work week) but he's off helping friends move.

 

The kids and I are having sauteed chicken free strips with veggies (cabbage, carrots, and broccoli) and rainbow quinoa. I tried out a new type of soy sauce and I really like it! I'm making rotisserie chicken tonight.  I'll either make some Ore Ida hash browns or some baby yukon gold roasted potatoes.  I have always liked Ore Ida potatoes.  They are always in our freezer in some form or another. :D

I have a wicked craving for chile con carne so am making a big old pot of it.  Right now.  It will pair perfectly with bay-infused Jasmine rice and homemade garlic cheese biscuits.  This is our high-carb cheat night.  :P  Will probably make some sort of cucumber salad.

Finally finished my corn tortillas tonight. I've been making those with some chicken, cheese and tomatoes.  I'm having an Old Orchard Apple Ale.."naturally gluten-free" :D.

We used to live in a townhouse and the woman next to us was from India.  For whatever reason she liked to cook in the middle of the night and waking up at 3 am to overpowering Curry just is not a good thing...I can't even walk into an Indian restaurant any more.

last night we had chicken stew (sort of chicken n dumplins)  boneless chicken thighs, (bacon LOLZ), onion, celery, carrot, fresh herbs (i put them into a tea ball, that way the flavor goes in and i don't have all wilty herbs in the finished product) and gnocchi instead of the dumplins.  

 

i has a cold :(  so, that was pretty close to chicken soup.........

I made these! Very nice. A bit like the top of a muffin - slightly crunchy out side and muffiny inside. Next time I think I will replace the chips with chopped walnuts or pecans. I put a speck of vanilla in the glaze. I didn't put them in the fridge before baking.

Simple green salad with fresh Balkans feta cheese and local capers.  I am making a sort of Mediterranean vinaigrette.  This afternoon I made Parmesan and garlic biscuits which will go nicely with the salad.

Udi's dinner roll was yucky to say the least. Anyone have a favorite roll recipe? I see plenty recipes on Pinterest, but am not too saavy on gluten-free baking (mixing flours). I'm also tired of wasting money on prepackaged mixes or frozen items that aren't good. Any idea on where to start? I'm dying for a hot, soft roll... Drool...

The recipe for dinner rolls in the ATK book is easy and they are absolutely mouthwatering. I can not recommend enough getting that book, it isn't the only recipe in it that you'll be glad you have.

Tonight I'm making Dijon herb pork chops, buttered noodles, roasted sweet potatoes and a tossed salad.

 

Really feels like Fall here today...so I'm going to bake a loaf of pumpkin bread...the house is going to smell so good.   :)

last night, we made cajun spiced fried shrimp with mango salsa, rice, and cole slaw <from garden cabbage.  

 

saturday, i had bought some boudin but i had no clue what to do with it.  so, i made creole rice and stuffed peppers with creole rice, boudin, (boodan lolz how the heck do ya spell it) and jack cheeze.  it was super yum.  the hubs woofed it down :)

 

i expect to be eating leftovers until wednesday :)

I am more of a stalker on this website and don't contribute much, but you guys are killing me with all the great foods you make.  I am going to have to be more adventerous!  

 

Last night we had Chili and I made Creme Brulee' in the Crockpot the day before and just melted the sugar last night before consuming...it was awesome!!!

Last night we had "Impossible Cheeseburger Pie" and a spinach and apple salad with pecans and a little lemony salad dressing I made.  You could add things like taco seasonings and serve with salsa but ...for some reason, we always like it just like it is.

      Sounds like you are in the UK. With blood numbers that high, I thought docs in UK would give an official diagnosis without the biopsy. You should ask about that, so you can get support faster.  I'd try to find and print out anything that supports that in your country, get another appointment and take all of it with you. Even in the US now, some docs are doing this, my 19 year old step granddaughter got an official diagnosis here in US with just blood results a few months ago.

      Is soy sauce in Korea also made from wheat like it usually is in US? I'd be concerned that even if asking about gluten, they would not be aware of or think of some like that.

      That's a good idea. It can at least establish the potential for developing celiac disease and can help people decided between a celiac diagnosis and NCGS (Non Celiac Gluten Sensitivity). And it doesn't require a gluten challenge and can be had without a doctor's prescription.

      I have my endoscopy on Thursday, has anyone had the procedure done with a cough? I don't have a continuous cough, but every now and then throughout the day I have sort of coughing episodes. They are a lot better than they were but I called endoscopy and they said to speak to my gp and my gp got back to me and said I need to ask endoscopy if its ok if I have it done still.  Help!

      Thank you so much, everyone. For the moment my doctor just has me taking iron but hopefully we can reconnect soon. I'm going to look into genetic testing, too. Great advice all around and I appreciate it--and you can bet I'm going off the PPIs!
