I am making crispy baked fish (cod) and chips with a light batter and crispy coating. Oh, and onion rings, too. Crudites with Green Goddess dressing.
Dessert? Today I made pecan cinnamon buns you ROLL out. Delicious. You can actually peel the layers apart.

So I am a happy girl with my carob coconut bars and 2,5 kilos of almonds. I have almonds for the rest of my life.
Gluten and dairy free: 5/2/2012
Grain free: 11/12/2012
I am able to eat somre processed foods again (chocolate, lollipops, soysauce).

I love good fish and chips - the real thing, not the fake insipid purchased icky commercial stuff. Oh, and did I neglect to mention my homemade tartar sauce with lots of capers? Oh, man. I almost can't stand it.
The pecan rolls are good but need a couple of tweaks. At least they unroll like they should...
And you know you would always be welcome here (as long as you and Sylvia shovel for us!
Confirmed celiac disease February 2011 from biopsies (had both gastroscopy and colonoscopy). Strictly gluten free March 18 2011.
Diagnosed with fibromyalgia April 13 2011.
3 herniated discs, myofascial pain syndrome, IT band syndrome, 2 rotator cuff injuries - from an accident Dec. 07 - resulting in chronic pain ever since. Degenerative disc disease.
Osteoarthritis in back and hips.
Chronic insomnia mostly due to chronic pain.
Aspartame free May 2011.
Dairy free August 15 2011. Can tolerate aged cheese Jan. 2012. Cannot tolerate much cheese at all 2013 so am eating lactose free cheese and drinking lactose free milk.

Can't say what I'm having.Irish told me I can't say left-overs or a meal with less than 3 ingredients.
Lovie will most def be our "chef" and we will give her whatever she needs. (I can help)

And let us be clear...I said we call it "encores".

yes..that is correct...... a real meal does have more than 3 ingredients...so we agree?

Turkey day today! I'll make cornbread pudding (from the new Living Without holiday issue), mashed taters, gravy, and pumpkin pie shakes. I'm far too lazy to make a real pie on top of actual cooking.
I bought that Holiday Issue so did you like the cornbread pudding?

Last night I made pizza using Bette Hagman's crust recipe and my new USA pizza pan. Great investment as like all other USA Pans, I did not even have to oil or spray the pan and the pizza slid right off. I previously was lining a different pizza pan with nonstick aluminum foil so this new one is a godsend.

When we have that gluten-free compound, this girl does not plan to shovel at all!!! We can all chip in and pay someone else to do it!!!
Last night I made pizza using Bette Hagman's crust recipe and my new USA pizza pan. Great investment as like all other USA Pans, I did not even have to oil or spray the pan and the pizza slid right off. I previously was lining a different pizza pan with nonstick aluminum foil so this new one is a godsend.

My hub would like to drive a tractor and plow the drive. When we were inColorado a few weeks ago, we looked at the real estate listings. There was a nice house with a nice second little house. The second house had the most gorgeous kitchen. Just need to a find a property with a few more houses on it. How many do I need?

I also baked a loaf of that bread that was 5" tall...and it had to be crammed sideways into my toaster.
I don't have "encores"...mine are strictly "leftovers".
