Mmmm! How do you make the honey butter chicken? Sounds good.

I'm making oven "fried" chicken tenders and homemade Mac and cheese.


It was pretty tasty, I actually let my 6 year old decide how to make the honey butter and she made me proud:)

We used chicken thighs and partially cooked them. Meanwhile my daughter took half a stick of butter, melted it and stirred in approximately a tsp of honey, brushed it onto the chicken and finished cooking it. When it was done the skin was crispy and slightly carmelized.

Had a big lunch out, so homemade chicken noodle soup. Butterscotch pie for dessert :)

yum....that sounds De-lish, Alex! Another example of a daughter showing her mom "she knows her stuff" :)
and just like Bac-on!!...you cannot go wrong with butter (IMHO)

I made carrot puree and had it with steak.

Actually an edible form of carrots, because I hate the taste but have to eat 'em anyways.

I am able to eat somre processed foods again (chocolate, lollipops, soysauce).

Butterscotch pie.....oh wow!!....(drooling...) I LOVE butterscotch.
We are having "encores".. of the bison stuffed peppers tonight. But getting no complaints, so that's good. :D

We also had a big lunch--something called a "Breakfast Scramble"
It involves eggs, cheese, sauteed peppers, onions, mushrooms, home fries, and......wait for it........bacon!

My friend who owns the gluten-free cafe created it...and I replicate it (as best I can) and the hubs...loves it.
I think it is just a way to use anything in the fridge. I made it into a frittata,

Confirmed celiac disease February 2011 from biopsies (had both gastroscopy and colonoscopy). Strictly gluten free March 18 2011.
Diagnosed with fibromyalgia April 13 2011.
3 herniated discs, myofascial pain syndrome, IT band syndrome, 2 rotator cuff injuries - from an accident Dec. 07 - resulting in chronic pain ever since. Degenerative disc disease.
Osteoarthritis in back and hips.
Chronic insomnia mostly due to chronic pain.
Aspartame free May 2011.
Dairy free August 15 2011. Can tolerate aged cheese Jan. 2012.  Cannot tolerate much cheese at all 2013 so am eating lactose free cheese and drinking lactose free milk. 

When our lives are squeezed by pressure and pain, what comes out is what is inside.

Pork tenderloin with roasted shallots and a pinot noir sauce.

Glazed baby carrots

Homemade applesauce for the hubs.


Supposed to be in the 50s and 60s this week in the Great Northeast..I'll believe it when I see it.
Yesterday, it was so cold...(19) even the cat balking at going out. :unsure: and she never does that.....

It's been January cold here too but today was very warm with rain all day. And dark :angry:
