My dinner plans have been amended thanks to laziness and brilliance. The laziness is mine, the brilliance is not. I will have caprese salad because I don't want to make my own pizza crust, garlic roasted chicken breasts and something vegetable-ish I'm sure. I'm sure the goat cheese will survive until I can get some crusts ordered, they only takes a few days to get here. I suppose plan B will have to be more mint chocolate chip ice cream. Such a burden! :lol:

My basil plant is going nuts, :D (but the pineapple mint and chocolate mint are even crazier--wow!)

 

so while I was in the  pool, I decided to make this tonight instead:

Last night we added a bit of basil too.

 

Salmon grilled with Basil Aioli

Rice with chopped Basil

Steamed Broccoli 

 

Brownies with Coffee Ice Cream and Vanilla Whipped Cream for the family -- Laundry Room/Master Closet flood for me - Yay -- off to the laundry mat to dry everything...Hubs will take care of the dishwasher/plumbing issue after work this evening -- boys get to do dishes from family dinner for 8 peeps last night -- campground style...hmmm guess they could do them in the tub rather than the back yard -- we'll see how I feel by the time I start barking orders at them ;)

I guess its basil season. :)

 

I have no idea what is for dinner, probably frozen burgers and more corn. (Cause I still have some.) I am not having a good day. Hubs doesn't have to go in to work until mid-afternoon so we went to the kitchen to get some brunch. He looks out in the yard and notices a hose in on in the grass... then sees we have INCHES of standing water in our corn. :angry: My MIL's husband apparently decided to just turn the hose on and leave it laying in the grass for no apparent reason for God knows how long to get that much water on our corn which is probably 40 feet from where the hose was. He made some excuse about thinking there was an end on the hose. Whatever. So we go about making our brunch while we talk about what to do and then he goes and starts DIGGING AT THE WATER WITH A BUCKET! More :angry:!!! Corn roots grow out, not down. It's like he's trying to kill it on purpose. So I went out and yelled about that.

 

So we decided to go out and bail like a sinking ship. Hubs used the new deep area that will probably result in at least two definite losses to get full cups of water, I was stuck in another row with a turkey baster sucking at the not as deep water. (Who knew turkey basters are garden tools?)  In our desperation I never noticed I was getting warm, then hot. Suddenly I was too hot. Full on heat reaction, fun times. <_<

 

So dinner... yeah. Assuming I cook at all will probably be frozen burgers and corn. Cause they take no effort. If I had the strength to do more than sit right now I would probably strangle someone. I don't even have enough energy left to sustain being pissed beyond all reason.

Lisa and Adaliade,  (((   ))) hugs to both of you.  I hope everything turns out alright.  

 

For dinner here in the deep, hot, south, we had hummus on cucumber rounds, romaine lettuce with chilled smoked chicken and a lemon juice and oil dressing.  Desert was water melon balls.  Irish sidekick had some redskin potato salad too.  He cannot have a meal without spuds.

So today I'm dealing with the physical fallout of the heat crap. Fun times. Oh well, in for a penny... mac and cheese for supper. I am completely out of craps to give. I know how stupid this is, I just don't care right now. (I'll probably care later... or tomorrow. Oh well. I've vowed not to b%$@#.) I'll probably just cook a burger or chicken breast or some such with it for myself and find something green. Maybe a brussel sprout or green bean.

 

I made the mistake last week while at the store of noticing Prego now makes a bacon alfredo sauce and then sending a pic to my husband. He came home with a jar last night and decided that would be his dinner tonight. I stopped reading the ingredients at soy something-or-other, but he is welcome to enjoy it.

today i had NO KIDS - they tried to give me 2 but i said NO they offered to double my pay..... (nobody pays me)  so, got alot of stuff done around here - not as much as i wanted to - had a friend from church who passed away on saturday (he was so sick - cancer) so i am making (well, it's in the oven already) a giant zucchini lasagne to bring for his (we always called it a wake, followed by the irish wake at the bar) 'viewing'.  i never made it before, i sure hope it turns out ok   :unsure:  if not, i will throw together a couple of giant gluten ham & velveeta samwich loaves and roll with it............

When it rains it pours right? Yesterday the fridge decided to have a fit and went out for a while. Just enough to make everything need to be thrown out. There were a few things that were frozen that could be saved by either cooking or using in the next few days because they're thawed, but it was a lot of food thrown out. <_< Oh well I guess, I have a better safe than sorry attitude with food safety. Looks like I'll be making strawberry jam tomorrow.

 

We're working on a huge project today, redoing our bunny's condo. Once that is done we'll try to put together our new grill if I can hack that. If we can, we'll grill some burgers outside for dinner. If not, I may just drag him to In N Out for dinner. Or pizza. Or something else easy.

It was delicious. I was not ignoring you, sweets....I simply could not get on the site. Some computer glitch and I did not want you to think I was being rude. I did answer you via email, but you may not have seen it yet. And, I seem to have rallied from the bites, their treatments and I was going to say all's well, except the hubs got a tick bite too. Epidemic in upstate NY this year. Even the doctor had one.

unctious!! love that word.

 

Dinner last night was pizza here, too. Not sure if it was unctious, :D but it was delicious. Carmelized red onions, bacon, an olive oil baste with garlic, 3 cheeses, fresh diced toms from the farm nearby, basil.  

I confess that I do not make the crust. My friend with the gluten-free bakery does. It's just fabulous.

 

It's usually our Friday night treat but we're having company on Friday, so it got moved to last night. Working on that menu in my head,

 

Tonight, black bean and turkey chili.

 

Do not want to get too excited, but it seems I can have small amounts of aged cheese, toms, & bacon and not have a plethora of symptoms....so, whoohoo!??  :) still a few things that bug me, (soy flour, eggs for example) but meh....I work around them.

Still plenty to eat. Just ask my thighs.

Hi All...not Merry Sunshine here of late -- the flood turned into major plumbing project that we have been putting off for years...today we'll decide if we are going to crack open the foundation -- my vote is no -- temp fixes last several years around here and I'd like to put it off for a bit longer until we can remodel properly -- ie when I have an income once again.  

 

And to heighten the fun I had another severe allergic reaction on Tuesday -- no idea what caused it -- well crazy theories but nothing I can prove....so am now on more prophylactic allergy meds which in and of itself makes me cranky.  

 

So dinner has been food -- dishes still being done in the bathroom -- I'll be back once the kitchen is functional and the frogs have cleared outta my head from whatever got me!!

 

Until then - stay cool and makes something yummy I can drool over when I check in ;)

I'm working today and managed to find a few minutes to get a pork roast in the crock pot before I got out the front door. Two ears of corn left in the house and maybe I'll manage something greenish too. 

 

Electricity is out in the common area here, so even though I brought my lunch, it didn't do me a bit of good without a working microwave. So, punting for lunch meant a quickie trip to In N Out. No complaining here.  :lol: Although I didn't have time to waste waiting around all afternoon for them to grill me onions so I had to do without.  :(

 

I think we're gonna put you in a bubble until you can knock off this being allergic to everything thing. You'd probably just decide to be allergic to yourself though...  :P

You can deposit your frogs here to get rid of them.

We've been discussing some sort of breathable but somehow water cooled underoos. Like the opposite of thermal underwear. It would have to be long pants and sleeves, but that is fine by me because I need to be protected from the sun. Still stinging like hell from a rash on my thigh yesterday. Apparently I never learn.  <_< I saw the line of traffic and was like omg this is gonna be baaaaaaaad. If I had my new backpack earlier in the day, Rainbow Dash could have saved me.

Lol....we have sketches of that type of garment too!  I've been dealing with this heat dealio for a long time -- since I was a kid really -- just got worse each decade.

I've had several people ask me about gluten free to lose weight because of the "Wheat Belly" book or a DR told them to go by this book!!! "This sounds like what you do"  UGH!!!!! I told them all okay, sure, I'll help you, I went gluten free and gained 40 pounds! I'm gluten free! Allergy free! Sorry, Its a thorn in my side.

 

On another calm note :) I'm having a simple baked potato and some chicken broth. Not feeling so good lately. I make black beans with jalapeno pepper, green onions, fresh garlic, and cumin. I do okay eating this with rice. Two days ago I added some gluten-free corn chips!! Not a good idea....I keep thinking I can slip corn in there.

Woke ready to say good riddance to one crap week!

 

Have already been cooking large batches -- for me.

 

Basil Almond Pesto

Cilantro Dressing

Carrot Garlic Sauce

 

Until I get clear from whatever has been causing my issues this week I am back to meat/fish with either zuccini curlz, spaghetti squash or sweet potatoes for every meal -- miscellaneous veggies added in for color and variety.

 

Will continue to post what I prepare for the family -- but for me I am set for the next week or more : )

 

Off to ride my bike before the sun gets too high in the sky.

      Thank you again for your reply and comments which I have read carefully as I appreciate any input at this stage. I'm tending to listen to what my body wants me to do, having been in agony for many years any respite has been welcome and avoiding all wheat and lactose has thankfully brought this.  When in pain before I was seen by a number of gynacologists as I had 22 fibroids and had an operation 13 years ago to shrink them . However the pain remained and intensified to the point over the years where I began passing out. I was in and out of a&e during covid when waiting rooms where empty. My present diet is the only thing that's given me any hope for the future. As I say I had never heard of celiac disease before starting so I guess had this not come up in a conversation I would just have carried on. It was the swollen lymph node that sent me to a boots pharmacist who immediately sent me to a&e where a Dr asked questions prescribed antibiotics and then back to my GP. I'm now waiting for my hospital appointment . Hope this answers your question. I found out more about the disease because I googled something I wouldn't normally do, it did shed light on the disease but I also read some things that this disease can do. On good days I actually hope I haven't got this but on further investigation my mother's side of the family all Celtic have had various problems 're stomach pain my poor grandmother cried in pain as did her sister whilst two of her brother's survived WW2 but died from ulcers put down to stress of fighting.  Wishing you well with your recovery.  Many thanks

      @BluegrassCeliac, I'm agreeing.  It's a good thing taking magnesium. And B vitamins. Magnesium and Thiamine work together.  If you supplement the B vitamins which include Thiamine, but don't have sufficient magnesium, Thiamine won't work well.  If you take Magnesium, but not Thiamine, magnesium won't work as well by itself. Hydrochlorothiazide HCTZ is a sulfonamide drug, a sulfa drug.  So are proton pump inhibitors PPIs, and SSRIs. High dose Thiamine is used to resolve cytokine storms.  High dose Thiamine was used in patients having cytokine storms in Covid infections.  Magnesium supplementation also improves cytokine storms, and was also used during Covid.       Hi,   Not saying Thiamine (B1) couldn't be an issue as well, but Mg was definitely the cause of my problems. It's the only thing that worked. I supplemented with B vitamins, but that didn't change anything, in fact they made me sick. Mg stopped all my muscle pain (HCTZ) within a few months and fixed all the intestinal problems HCTZ caused as well. Mom has an allergy to some sulfa drugs (IgG Celiac too), but I don't think I've ever taken them. Mg boosted my energy as well. It solved a lot of problems. I take 1000mg MgO a day with no problems. I boost absorption with Vitamin D. Some people can't take MgO,  like mom, she takes Mg Glycinate. It's one of those things that someone has try and find the right form for themselves. Everyone's different. Mg deficiency can cause anxiety and is a treatment for it. A pharmacist gave me a list of drugs years ago that cause Mg deficiency: PPIs, H2 bockers, HCTZ, some beta blockers (metoprolol which I've taken -- horrible side effects), some anti-anxiety meds too were on it. I posted because I saw he was an IgG celiac. He's the first one I've seen in 20 years, other than my family. We're rare. All the celiacs I've met are IgA. Finding healthcare is a nightmare.
