I'm by myself tonight...I had 2 slices of homemade banana bread with peanut butter and sauteed apples. Just what I was in the mood for--yum!

I'm not cooking tonight. I made a Teff wrap for daughter with a little margarine, lettuce and turkey. She is also having baby carrots and apple slices.

Not sure what I'll have. Maybe a can of chili.

Becky (me)-35yo; hypothyroid 8yrs (symptoms at least 1 yr prior); Plantar Fasciitis (PF) (tendonitis in foot) 4 yrs; ovary & softball size cyst removed Feb 2008; Sleep Apnea 3yrs; Dec 2008- realized wheat affects hormones-- went semi- gluten-free (aka, gluten lite!). Interstitial Cystitis (IC, aka painful bladder syndrome) (self dx. controlled by diet- can't have acidic foods/ drinks). July 2010-- realized there was more going on, was going to do the sensitivity/ Celiac testing, decided it wasn't worth it! Am now truely learning to live the gluten- free lifestyle!
My DH-38 yo; born w/ Spastic cerebral palsy. legally blind, uses wheelchair. back surgery Aug 2007, has continued back troubles.

Last night I made chicken and black bean tacos. I used to make them as burritos, but haven't found a suitable flour tortilla substitute yet and I don't like corn tortillas. So I just fill taco shells now and it's still delicious! I've always loved to cook and I'm not letting this gluten-free thing get me down. Luckily, almost all of my favorites can still be made by either changing or omitting a couple things. Obviously my fav breaded recipes are out, but I'll find new favorites! Also found a great recipe for pecan crusted chicken with a mustard sauce. BF said it was REALLY good!!

Made roast beef/gravy, mashed potatoes and mixed veggies earlier this week. Made the gravy with cornstarch and it was perfect.

- Kansas City Rubbed Pork Baby Back Ribs with Homemade Spicy Sweet BBQ Sauce
- Fingerling Potatoes Roasted with Garlic Cloves and Fresh Thyme and Rosemary finished with Smoked Maldon Sea Salt
- Spiced Fried Onion Rings with Cracked Black Pepper Creme Fraiche

Confirmed celiac disease February 2011 from biopsies (had both gastroscopy and colonoscopy). Strictly gluten free March 18 2011.
Diagnosed with fibromyalgia April 13 2011.
3 herniated discs, myofascial pain syndrome, IT band syndrome, 2 rotator cuff injuries - from an accident Dec. 07 - resulting in chronic pain ever since. Degenerative disc disease.
Osteoarthritis in back and hips.
Chronic insomnia mostly due to chronic pain.
Aspartame free May 2011.
Dairy free August 15 2011. Can tolerate aged cheese Jan. 2012.  Cannot tolerate much cheese at all 2013 so am eating lactose free cheese and drinking lactose free milk.

Just let me know when your flight arrives and I'll pick you up at the airport three hours from here. Dress warm - we still have at least three feet of snow and it is -20C. :P
