Taco fixings on a baked potato for dinner tonight followed by a taste of the chocolate velvet cupcakes I made for my daughter tomorrow. She is 6 1/2 and just got invited to her first not family birthday party at a ceramics place!!! We are all very excited for her.

Hi Lisa, I've tried spaghetti squash, it's expensive here (UK), and all i ever got was stringy mush.....so I gave up on that, lol.
I've done courgette and carrot 'ribbons' with a peeler, they're OK......used a mandolin to make jullienne also. The reason why I'm hoping the spiraliser will be better is that it will make 'noodles' that are thicker than I can accomplish with a peeler and longer than those I can make with a mandolin...if that makes sense.

Obvious symptoms started as a baby with gastroenteritis....
Self - diagnosed celiac at age 41 - Gluten-free since December 2012, shortly after realised in needed to avoid:
Dairy, soy, all grains, all pseudo-grains, nightshades, legumes, MSG, xantham gum, all sugar alcohols.
Low sugar/refined carbs since Aug '08 due to reactive hypoglycemia.

22/03/13 Mung beans and blackeyebeans reintroduced successfully!

26/06/13 Some symptoms mysteriously returned - found loads of CC in my nuts and dried beans!! (verified by food/symptom journal and emails to companies)

26/11/13 After 2 weeks on crutches (again) realised that legumes cause my joints to inflame - it's undeniable....legumes gone!

Yep...that makes sense and I'm looking forward to hearing how your new gadget works. Spaghetti squash took awhile for me to master - seems like it would be simple - and is now -I buy large quantities when they go on sale and keep in our storeroom that stays cool like a basement or root cellar.

Ill post how to cook them when I'm back on my laptop.

Well, i decided to retry my alfredo and spinage goodness in two parts. I retried the alfredo sauce, and outside of the mild acid reflux, i am happy to note that my body does just fine with it. That was... 3ish hours ago?

 

Though i might go make a corn tortilla with a little honey butter on it. :ph34r:  Kinda got a low blood sugar thing going on at the moment (jidders).

I think I expressed my outrage about the bike thief clearly enough over email, but I'll add one more &^%$! to the tirade.  :angry: asshat thief.

Having some continued success adding foods back in down here, (brown rice and all fruits seem okay) but still unable to tolerate the high histamines ( aged cheese, alcohol, vinegars, cured meats, chocolate) . I can do a bit, but if I do too much in one day, symptoms come back.

Like you, I remain ever hopeful.

Loved,  loved,  loved your email about the new guy in your life. Bingley is a perfect name and I am so happy he has adopted you guys! ;) Much happiness with your new fur baby, hon!!

 

Dinner last night was a Greek salad (made by me) accompanied by grilled steaks and some (gluten-free of course) almond macaroons.

But I did not have to cook! yaay!

 

The management of the hotel/cottages does a 'welcoming dinner for the residents. The owner and his wife have a son with Crohn's (but they suspected celiac and he was tested for that, so they "get" it). He assured me the only herbs/spices on the steaks would be McCormick's.  :)

 

A singer/guitarist played for 4 hours while people ate, drank, and chatted. (and sang horrible renditions of "Wasted Away again in Margaritaville)   :lol: ) The guests are from all over the US, Canada and Europe and they started off with a giant "pot luck" appetizer table. They all ate mini hot dogs wrapped in dough, crackers and cheese, packaged cheese spreads and crackers, something that looked like fried dough balls?? Devlied eggs (which the hubs scarfed down) Honestly, I could not possibly have cared less for what they were serving, all that gluteny blech. When urged to eat, I simply said "Thanks, but that stuff will kill me"   Laughter ensued (must be my delivery? or they were drunk ) but some asked why?  I give my 20 second answer and today, I have people asking me more questions.  Celiac awareness takes no vacations.  :D Even the massage therapist grilled me and now, her hubs is getting tested.

 

The night before, we made a Chebe pizza with fresh vegs  --the produce stand nearby is just remarkable--and I enjoyed it immensely. Apparently, mozzarella is okay, but not parmesan--but that's cool with me. I'm happy just to have some "za".

 

My best friend, the chef is making traditional Corned Beef and Cabbage tomorrow  and I'll be bringing the Flourless chocolate cake, as she requested. I can whip that up in the AM.

 

I had Mahi-Mahi with coconut/mango marinade and brown rice couscous and herbs the day before that. 

 

That's all for now. I have limited wifi, so I am sorry this post was so long.

Loved your post, IH!!!  Love seeing people enjoying life and being happy.  :P

 

Happy Birthday to Me!  Tonight I am making:

 

- Seared bacon wrapped diver scallops that I first dip into a garlic butter mixture then roll in bacon, sear and then serve with a roasted chestnut and wild mushroom cream (dried mushrooms foraged in Croatia we brought home in October)

- Roasted spicy edamame beans

- Standing Rib Roast with a porcini/orange zest et. al. rub - will be roasting to a perfect 130.

- Roast baby potatoes in beef drippings

- I was going to braise pork belly but my back is not allowing it (I slipped on ice yesterday in the park and had a bad fall - landed on my left hip)

- Eton Mess for dessert (made the meringue and raspberry coulis yesterday so just have to whip the cream and layer with all sorts of berries and top with toasted almonds and toasted coconut)

 

The house smells simply sublime!  Can't wait til my husband comes home from work.  ;)

Tonight we are ordering in from someplace that has a great track record with gluten-free, and they have a huge menu. We are having sandwiches, mozzarella sticks, pierogies and my hubby is getting me a cannoli because that is probably the one thing that I never stopped missing.

I got cauliflower in my basket today and I didn't want to do the same old boring crap with it. So I headed to google and found a fun recipe for spicy buffalo cauliflower. Sounds like IH is having a blast. Foodie dream for vacation, it sounds positively divine.

yum Addie....we - the hubby part of we ;) - have gotten so good at cauli-fried rice even my men are enjoying it

 

meanwhile...I got really pissed at the mgr of the specialty liquor store that TOLD me, "yes, we carry Green's Double Dark Gluten Free Beer"  Liar, Liar, pants on fire!!!  Redbridge it is...didn't feel like driving or wasting more gas to go to another store that carries a better selection of gluten-free beer...live, learn and have a glass of wine to chill out  :)

Crazy (and totally wrong) Irish toast I saw recently. Given the proclivity for the Irish to have celiac (so much so that they dub it "celtic disease") I find it bizarrely ironic. (but I have a twisted sense of humor as you know)

Happy St Patrick's day everyone

IH it sounds like you are having a ball, fantastic.

So, I have confirmed that soy is not my friend. Tried gluten-free soy sauce last week and had bad tum. Tried a handful of fresh soy beans last night. I got got. Rashes on face, sore throat then cramps, bloating and exhaustion this morning. And I think I found the source of post nasal drip and persistent cough.

Lovely sunny day, family at in laws, feeling better this afternoon, so chilling and taking an afternoon off :)

Worry about dinner later...

- Symptoms from 2001, maybe before. Across 20+ years, these have included, vomiting, D, migraines, headaches, recurrent miscarriage, inflammation problems (failure to heal from injuries) brain fog, anxiety and more!
- Elimination diet using Atkins, 2003 – excluded wheat, caffeine, quorn. 2005, excluded sesame, alcohol
- Started diagnosis route April 2012, blood tests, endoscopy – said negative, gluten challenge, clearly something very wrong, had to stop after 3 weeks.
- Gluten Free, August 2012, Corn Free, September 2012. Removed most processed gluten free foods.
- Genetic testing, December 2012 – negative – Diagnosis – Non Celiac Gluten Intolerance (NCGI)
- Elimination diet, January 2013 – all of the above plus dairy, legumes, all grains, sugar, additives, white potatoes, soy. Reintroducing sloooowly now. Health improving.

Sorry you got "got". Darn soy.

I avoid it, too.Not hard to give up for me, really--not a soy fan, but it is pervasive.

 

I have used Coconut aminos for an adequate soy sauce sub. Just a suggestion.

I've adopted coconut aminos too. They aren't the same, but they work well in sauces and such. I also don't miss soy, I miss soy sauce! It drives me up a wall that soy is this "healthy" thing so it is everything. At least lecithin doesn't bother me. Yet.

 

I have 3 jars of George left. Friday night my husband brought home Easter George from work. (We figure every pig has two ham legs so there isn't a need for a new name yet.) They were selling fast, and so now I have to have a 20 pound ham in my fridge for the next two weeks. <_<

 

I managed to score a pretty small corned beef at the store last night, so that will be tonight's dinner. I got a ton of good veggies yesterday in my basket so it seemed silly to buy a head of cabbage when I have what is probably a week's worth of vegetables already other than potatoes. So, I think roasted potatoes and I'll probably decide at the last minute between asparagus and fried green beans.
