I cannot believe how much its been raining this week. I'm enjoying it, but i got soaked again.

We've had rain every day this week. Really bizarre weather we're having. I swear sometimes with the way our weather syncs up we could be next door neighbors!

It either left-over crockpot lasagna or Minsky's pizza.  We tried to get pizza last week and the pizza oven wasn't working!

I remember Minsky's!  I never ate there since being diagnosed but they had great gluteny pizza!  I went on my first date there.

 

Anyway...Colorado food pretty much is awful.

 

I am making chicken drumsticks, homemade oven fries and asparagus.

As did I. I miss it a bit.

 

No idea what i'm doing for dinner. I just finished a 10 page paper that i had to rush to turn in (with 30 minutes to spare).

 

Its gonna rain again...

I'm down the road from Vail.  It's not the middle of no where and not far from Denver actually.  I think it has something to do with being at 8500 feet.  Altitude and cooking or something.  Kansas City had good food!

Eeeek, i'm at like 6800 or something. I miss cooking at sea level, or at the very least below the high altitude requirements.

Meatballs, new potatoes, salad coming up. I love Mr Mindwarp.

Been to a party for a 4 year old, another tomorrow morning. It's the high life here :)

- Symptoms from 2001, maybe before. Across 20+ years, these have included, vomiting, D, migraines, headaches, recurrent miscarriage, inflammation problems (failure to heal from injuries) brain fog, anxiety and more!
- Elimination diet using Atkins, 2003 – excluded wheat, caffeine, quorn. 2005, excluded sesame, alcohol
- Started diagnosis route April 2012, blood tests, endoscopy – said negative, gluten challenge, clearly something very wrong, had to stop after 3 weeks.
- Gluten Free, August 2012, Corn Free, September 2012. Removed most processed gluten free foods.
- Genetic testing, December 2012 – negative – Diagnosis – Non Celiac Gluten Intolerance (NCGI)
- Elimination diet, January 2013 – all of the above plus dairy, legumes, all grains, sugar, additives, white potatoes, soy. Reintroducing sloooowly now. Health improving.

I've been through Vail a few times. Once was at night in the snow and it was magical and surreal. Oh... and scary as hell on those roads!

 

Tonight is grilled chicken breasts, I'll think of something or other to season them. And probably some fried green beans and some oven taters. I am still positively exhausted from a long week. Hopefully I will fare better this upcoming week, as I was pretty much dead on my feet last night and felt quite like a zombie as I went with my husband to find new work clothes and shop for my Mother's Day present.
