it's my 3 yr anniversary today on this board, when y'all took a crazy sick person and made her better :)  and maybe a little crazier lolz

 

THANK YOU DINNER CHATTERS!  and everybody, too, as well   ;)   although now i have a food porn habit and hafta check into kabana boy rehab.......   <_<

Rehab is for people who want to quit their habits. I am never going to kabana boy rehab. No how. No way. I also will not be held at all responsible for anyone's craziness. Heck, I don't barely let anyone hold me responsible for my own. :D

tonight I'm cooking pork apple salad with quinoa.  I've just used  a bit of salt and pepper and cut up the pork into squares, then I'm going to cook that with a bit of olive oil, some pecans, broccoli, green pepper, (wish I had green beens etc) then I'll let all that cool down and mix it in with a cut up apple, spinach and some other lettuce and maybe some broccoli slaw. I wish I had some balsamic vinegar because that would be really good reduced.

Greek roast chicken quarters - am tempted to peel off the crispy skin to insert into my tummy before my man gets home from work but methinks he will notice!
Greek lemon oegano and roasted garlic roast potatoes
Steamed broccoli
Apple crisp with vanilla beans

 

I'm not supposed to eat chicken skin, but fortunately my husband doesn't like it. So if it was all gone before he was home he would never know! Well... except the whole migraine and being half blind thing, but it is possible that it would be almost worth it! Just tell him you made skinless chicken. Think he'll buy it?

So I am still on extremely limited Meat, Z- or Sweet Potato Spirals with Veggie meals which is boring and have not helped the men cook their food in over a week...

 

but I did make a twist on my old Chocolate Mousse Recipe -- trying to limit even Choc for a bit -- Hubby walked in and asked what I was making but I had no idea...it is now called "Snickerdoodle Mousse" -- will need some adjustment, but it wasn't bad...didn't set in the frig so the remainder will be "Snickerdoodle Ice Cream" tonight.

 

Coconut Oil

Coconut Milk

Agave

Vanilla

Cinnamon - went light as I couldn't remember...but fairly sure this is a Histamine

 

Next batch will likely be simply Vanilla Mousse.

Huh...how does the Chicken Skin react with you?  Since I've given up so many other things - stealing Crunchy Chicken Skins has before meat hits the table has become a guilty pleasure for me.

Huh...how does the Chicken Skin react with you?  Since I've given up so many other things - stealing Crunchy Chicken Skins has before meat hits the table has become a guilty pleasure for me.

 

Its some stupid tyramine crap with my pseudotumor nonsense. :rolleyes: I can usually get away with an itty bitty bit of skin, but as much as is on a whole leg and I'm done. I am so a pick the skin off a chicken kind of person too. I could pretty much go to Costco, buy a chicken, eat the skin and not feel the least bit guilty. And I don't mean the skin from my part of the chicken, I mean the whole chicken.

 

And yes, cinnamon is a stupid histamine thing... but my attitude with that has turned into come the hell on! How the hell is a little cinnamon here and there really hurting me? (I'm not looking for a real answer. :P) I went there with food, I'm not going there with flavor. <_<

I hear you...and I have been having small amounts of histamine over the past months...occasionally more than a small amount of wine...but after last week I am tiptoeing around my food this week ;)

Most awesome....SnickerDoodle Mousse for me again tomorrow...hoping to get it to firm up in the frig....the choc version tastes creamier without freezing....of course that means more coconut oil...but not getting much fat elsewhere so I am not feeling guilty...nope.

My BLT got put off until tomorrow's lunch. We were at the store and found pork um... they're basically like hamburger things. Whatever, they were yummy with some sort of maple seasoning thinger I have in the pantry and some squash and onions.

 

My tomatoes did get roasted though so I'm all set to come home tomorrow from my IV nonsense, pop my bacon in the oven and get all set to have a toasty BLT and put myself to bed for the afternoon. Sounds positively delightful. :)
