I made a big roast last night. Not sure what I'm making for dinner tonight but today and tommorrow I'm going to be doing some baking so we have some baked goods incase huricane Irene knocks out the power here. I'm making cornbread muffins and some type of flat bread for sure. What else should I bake? What would y'all make to prepare for a storm?

I would make some other type muffins also and perhaps some cookies. I would buy like you did. I hope the storm won't be so bad for you!

I just made soup from Sour Kraft and steamed some "donuts", "cakes" or "dumplings" (I don't know have to translate this)stuffed with Italian plums and covered with chocolate filling.

I will post recipe later.

Thanks! It wasn't so bad. Only a little siding and some roof tiles came off and we were stuck in our house until sunday afternoon due to flooded streets. Power blinked off and on all day Sat and Sunday. Not sure what was goign on on Sunday sinc ehte wind and rain were gone--I guess they were trying to fix it for others and had to take ours off for a few hours.

The roast I made got turned into a big pot of vegetable beef that I kept going on low on the stove for most of the storm on Saturday (it stayed hot even for the few hours we were without power). And we had lots of stew with corn muffins and chips. In fact we ate a bit too much during the storm. Must have been boredom or nerves or something.

Sunday we made kabobs on the grill since the power kept coming and going and the whether was really nice and clear.

Tonight I'm making something light--probably salad--because we ate so much over the weekend! :lol:

Tonight is going to be a clean out the fridge and add pasta to it night. I think I have turkey bacon, onion, garlic cloves, carrots, fresh basil, chicken and one apple left. I will probably sautee it all with a little bit of olive oil and add it to Tinkyada penne.

What are Hasselback potatoes?

You take unpeeled potatoes (Yukon golds are the best due to their starch content), place on a large wooden spoon and slice very thin slices not all the way through. It looks sort of like an accordian. Then you insert yummy things between the slices such as bay leaves, pancetta, slivers of garlic, fresh thyme, etc. then drizzle with olive oil and roast. Before I found I was lactose intolerant I would insert thin pieces of good cheeses or you can sprinkle on top.

Do you like risotto? An herbed risotto would be lovely with piccata. You could even quickly fry up some capers just until they open and sprinkle on top (the flavour changes - sort of how garlic mellows when roasted).

Or if you prefer regular rice perhaps cook it in carrot juice instead of water. Nice flavour and colour. I like to infuse rice water with lemongrass stalks, kaffir lime leaves (dried are fine) or bay leaves and a few tablespoons of lime juice or lemon juice.

Or how about an herb pilaf?

OK - last night I said we were going Provencale today but that will have to wait until tomorrow because the Daube I am making takes 48 hours. So, tonight was:

- Seared Brined Pork Tenderloin with Spicy Apricot Glaze

- Lemongrass-Infused White Rice

- Roasted Red Peppers with Bagna Cauda

- Watermelon with Balsamic

Tomorrow's meal will be more exciting! :)

That sounds yummy! I can't wait until we have more cool days here so I can make more soups. I still make soups and stews in the summer because I love them but if I do too many my husband gets upset. He'll say to me "It's 105 degrees outside and you made soup?!? what are you thinking?" I'll reply "I was in AC all day and I love soup!" LOL!

We have been having some lovely days in the upper 80's here so we've been using the grill a lot lately. Tonight I'm going to do turkey burgers, summer squash and zucchini on the grill.

It is chilly today so the following is perfect:

Traditional Provencale Daube (takes 48 hours to make but soooooo worth it!)

Smashed Potatoes with Chives and Black Garlic (wanted to make Pommes Anna or Dauphinoise but as I cannot have dairy obviously will not work!)

Ever-so-slightly Braised Carrot Ribbons with Lemon Vinaigrette

Individual Lemon Souffles (using coconut milk rather than cow's milk)

I just discovered Taste of Thai at the grocery store. These dinner mixes are gluten free (marked on the package). Last night I made Pad Thai with chicken. It was wonderful.

roasted garlic mashed potatoes with broccoli, and, with luck hubby will find and bring home to me some gluten-free beer! I am having a craving, must be the yard work I did today!

BTW, I have to shout-out a big thanks. I have only read 4 pages of this thread and found I can have 3 things I thought I couldn't! :P I never eat breakfast because I can't find things to eat so I am loving the breakfast thread too!

Sauteed summer squash with vegetable-style tempe & dulce (seaweed) with a tamari/sun-dried tomato sauce over quinoa

and marinated cucumber dill salad

Most meals in my house are vegetarian as well as gluten-free. I'm wondering if there would be enough interest to start a 'what's for dinner' thread for vegetarians? Or is that subgroup just too small, and I should look out for veg meals here? I do love this thread!

      Nacina, Knitty Kitty has given you good advice. But I would say/add find a Fat Soluble B-1 like Benfotiamine for best results.  The kind found in most Multivitamins have a very low absorption rate. This article shows how taking a Fat Soluble B-1 can effectively help absorption by 6x to7x times. https://www.naturalmedicinejournal.com/journal/thiamine-deficiency-and-diabetic-polyneuropathy quoting from the article.... "The group ingesting benfotiamine had maximum plasma thiamine levels that were 6.7 times higher than the group ingesting thiamine mononitrate.32" Also, frequency is much more important than amount when it comes to B-Vitamin. These are best taken with meals because they provide the fat for better absorption. You will know your B-Vitamin is working properly when your urine becomes bright yellow all the time. This may take two or three months to achieve this.......maybe even longer depending on how low he/you are. The Yellow color is from excess Riboflavin bypassing the Kidneys....... Don't stop them until when 2x a day with meals they start producing a bright yellow urine with in 2 or 3 hours after the ingesting the B-Complex...... You will be able to see the color of your urine change as the hours go by and bounce back up after you take them in the evening. When this happens quickly......you are now bypassing all the Riboflavin that is in the supplement. The body won't absorb more than it needs! This can be taken as a "proxy" for your other B-Vitamin levels (if taken a B-Complex) ...... at least at a quick and dirty level......this will only be so for the B-1 Thiamine levels if you are taking the Fat Soluble forms with the Magnesium as Knitty Kitty mentioned. Magnesium is a Co-Factor is a Co-factor for both Thiamine and Vitamin D and your sons levels won't improve unless he also takes Magnesium with his Thiamine and B-Complex. You will notice his energy levels really pick up.  His sleeping will improve and his muscle cramps will get better from the Magnesium! Here is nice blog post that can help you Thiamine and it's many benefits. I hope this is helpful but it is not medical advice God speed on your son's continued journey I used to be him.
