I eat congee most mornings. This is a Chinese dish that is sort of like a "cream of rice".

http://chinesefood.a...st/r/congee.htm

You can add whatever you like to it, such as frozen peas/carrots or leftover meat. I generally eat it with shrimp or leftover chicken, mushrooms, green onions, bean sprouts, some peanuts for crunch, then season with sesame oil and gluten-free soy sauce.

It is very, very easy to make!

2007 - dx'd with Graves' Disease
Suspected DH (no biopsy)
Tested negative for celiac (after gluten free two months)

2012 - Gluten free again after suggestion it might help my thyroid symptoms. Many strange one-off symptoms cleared up. Brain fog gone.

Since it is a holiday weekend with everyone home and we don't get to eat out, I'm making my baked corndogs again. I chopped up the hot dogs, added corn and green chile. This gives me another chance to experiment with my hm flour.

I had leftover steak, thoroughly heated and placed on Genius sandwich bread, sprinkled cheese over it. I also had an apple and a brownie I made from an (obviously) gluten-free mix: because I have a chocolate problem.

We had scrambled eggs with sauted shallots, diced tomato and gouda cheese served with crispy bacon, a toasted Against the Grain roll and a side of fresh pineapple. It was the bomb. I think I'm gonna try congee (brown rice though) in th little crock pot tonight, thanks for that link.

Positive improvement from elimination diet. Mother dx'd by Mayo Clinic in late 1980s. Negative blood tests and Upper & Lower GI biopsy. Parathyroidectomy 12/09. Recurring high calcium level 4/10. Gluten-free 4/10. Soy & Dairy Free 6/10. Corn free 7/10. Grain free except rice 8/10. Legume free 6/11. Fighting the battle of the battle within myself, and I'm going to win!

As of 2/12, tolerating dairy, corn, legumes and some soy, but I limit soy to tamari sauce or modest soy additives. Won't ever try quinoa again!

Discoid Lupus from skin biopsy 2011, discovered 2/12 when picking up medical records. Systemic Lupus Dx 6/12. Shingles 10/12.

Let me know how the brown rice works. I am trying to get away from white rice but I am unsure how it would work for congee.

Yay! Someone is trying it! I never get tired of it because there are so many different ways to serve it up.

Your breakfast sounds fab; when my stomach is more settled again, I'll try that.
