Anyone know any brands that are safe? I'm trying to check into Gallo, but haven't heard anything back yet.

Boar's Head brand Salami (and most of their other cold cuts) are gluten free. I believe it is only the "loaves" i.e. olive loaf, pimento loaf that contain gluten.
I received a note from them about 6 months ago stating this... you may want to contact them directly. Also, we had a nice ham at Easter from Boar's Head! It was great with one of their glazes.
