Not sure how many of you live near a Moe's, but their nachos here are to-die-for!! I emailed the PR dept and asked about gluten and this is what I received back. YAY! I just wish all restaraunts were like this!

Hi *,

We have been making great efforts to eliminate gluten from everything we can in our menu in order to be able to accommodate you and the millions of other people in our country that are being diagnosed with gluten allergies or celiac disease. We are almost there, the last step is in the works. The vegetable base that we use to make stock, which is used to keep in the cooking process of rice, beans and our chicken, does contain a small amount of gluten. However, we have worked with Knorr Foods to design a vegetable base that is not only MSG free, which has always been the case for us, but also Gluten Free. That process is done and the base is being shipped to many of our restaurants right now. However, until we know that it is in all of our restaurants, we can’t guarantee that any of them are truly gluten free.

Once we know that we have the new Knorr base in all of our restaurants, we intend to update our website with a gluten free menu listing and an announcement about being gluten free. Once that happens, we will be gluten free in all of our food except the tortillas themselves, we are very excited about this.

I am sorry that it might take another 30-60 days to get there, we appreciate your business and your patience.

      No! Do not start the gluten free diet until you know whether or not you will be having an endoscopy/biopsy to verify the blood antibody test results. Starting gluten free eating ahead of either form of diagnostic testing can invalidate the results. You don't want to allow the villous lining of the small bowel to experience healing ahead of testing by removing gluten.

      Thank you! What do you recommend in the next 7 weeks until I see my Doctor?  Just start my Gluten free diet?

      Many people with celiac disease, especially those who are in the 0-2 year range of their recovery, have additional food intolerance issues which could be temporary. To figure this out you may need to keep a food diary and do an elimination diet over a few months. Some common food intolerance issues are dairy/casein, eggs, corn, oats, and soy. The good news is that after your gut heals (for most people who are 100% gluten-free this will take several months to two years) you may be able to slowly add some these items back into your diet after the damaged villi heal.
