Thanks Lori, but I drink my coffee black. I hate flavored coffee so much I won't let anyone use it in my coffee maker here at the shop because the flavor gets into the plastic and you can never get it out. I won't grind my beans at the grocery store for the same reason. Of course at home I use a French press, and it makes the very best tasting coffee ever.

I only had two cups this morning though. I'm proud of me. :)

I drink my coffee black, too, but the French Vanilla Almond flavorings in the coffee got me. However, my coffee was ground. Perhaps whole beans do not come with flavorings.

Thanks (once again!) Skylark, for your helpful advice! I checked out the list and it makes a lot of sense to me. And from what I've heard about quinoa, I have a feeling I might not like it. I know it must be rinsed very well before cooking, but they say it has a soapy taste. If I don't like it I'll do the lentils and rice instead.

Glad the lists helped! The SCD lists are really useful for tummy trouble as long as you can eat fructose. As far as quinoa, Bob's Red Mill quinoa is pre-rinsed with no bitter taste at all. I like it better cooked in broth rather than water and you can dice up an onion in it. (I used to throw in a can of tomatoes but I don't tolerate them now.)

You know what really surprises me? I'm not hungry all the time like I thought I'd be. I think it's the avocados that are making this easy. Before, no matter how much of my rice/meat/veggie mixture I would eat, my body was screaming at me to eat more. I think there is something in the avocados that my body has been crying out for.

That would be fat. :) Once I lost cheese I had to track down some richer snacks. Once your food list is less restricted, olives and olive oil are really good, or you can bake with lots of yummy coconut oil. I eat a lot of nuts too but I imagine it will be a while until you try those.

In my experience most nutritionists simple parrot what they heard in school and fail to accept anything that challenges that view. I am not saying this is one of them; however, I think we put too much stock in their opinions.

The nutritionist suggested coconut oil and I bought some but haven't added it to my diet yet. Does it TASTE like coconut when you cook with it? I ask because when I was three years old, Mom was making a cake and had coconut out that she was going to put on the frosting. She had her back to me while she was mixing the cake and I ate that whole box of coconut. Then I proceeded to purge the coconut. :blink: A lot. To me the virgin coconut oil does not taste like coconut at all. Just oily.

I have two jars of coconut oil. One is Spectrum brand lightly refined, designed for moderate temperature cooking. It has almost no flavor. The other jar is Dr. Bronner's Extra virgin coconut oil and it has a light coconut flavor.

Bartfull, have you ever tried tea instead of coffee? If your system is struggling it is something to think about trying. I took a course teaching how the liver becomes polluted and then creates problems with the way the body functions. On the list of pollutants was coffee, prescript meds, chemicals in meats/fruits/veggies, food additives in processed foods, stress.....yes, stress! All of this seems to fall in-line with what your nutritionist was saying.

However, what I did find out thru on-line research is that you can soak your meats in either plain water or vinegar water for at least 2 hours, and rinse veggies and fruits with a vinegar water solution and this is supposed to help. I always rinse.

Right now I am also eliminating some of the foods your nutritionist suggested as it seems I have been chasing a fire in my body non-stop, I think the term "hyperdrive" is very appropriate.

We all are a little different and you will have to experiment with what works for you. I had issues with fresh cauliflower, squash of all kinds, tomatoes (salicylate reaction), cabbage, and white beans. My diet has more potatoes, eggs, avocados, bananas, apples, pears, greens, chicken and fish for the most part. I am currently taking out sugar (that is not easy or fun) and eliminating dairy. I was reading something very interesting the other day about bone/joint pain (I have had quite a bit). Dairy can cause an inflammatory response in the joints and bones so I thought I would give it a try. I have been taking in dairy with a lactose enzyme but resolving the suagr issues might not be the only issue.

BAD morning! I had never replaced Mom's saucepan because I've just been microwaving everything. So I went to the only store in town that sells things like pots and pans and bought a chintzy (because that's all they had) thin, spun stainless steel pan and a strainer. These two items cost 30 bucks. Then, because a lot of brand new still in the store pans are given a light coating of corn oil, I scrubbed them, washed them again in alcohol, then scrubbed them again.

The quinoa I had bought was NOT Bob's Red Mill, it was Arrowhead Mills, so it needed to be rinsed. Well, even though the strainer was wire mesh, the holes were too big so I had to rinse in the pan. I rinsed and rinsed. Then I cooked it.

Quinoa is NOT food! I refuse to eat it!

I'm feeling like crap right now, stressed to the max with all the running I do, I hate to cook anyway, and I wound up flinging it acrosss the room (into the sink), hollering "I AIN'T EATING THIS *@&*!!"

Then I cleaned up the mess and took off for Kelly's (my friend with cancer whom I have been taking care of) so there was no time to cook anything else. I've got nothing to eat today but some broccoli and I won't get out of here until eight o'clock tonight.

I TRIED to go to the healthfood store. They're supposed to be open at 10 AM and so am I. I decided I'd open a little late so I could at least pick up SOMETHING I could eat today. There was nobody there, even though it was after 10.

I'm SICK of it all!!! I feel like giving it all up. I don't care anymore. It doesn't make any difference what I eat, I still feel like garbage so why should I put myself through all this? I want to break something! I want to kick something! I want to scream at the top of my lungs, using words I can't print here. I want a *@%#*&# CHEESEBURGER!!

And I may just eat one. I don't CARE if it makes me sick because I'm sick anyway. Why should I make it worse by denying myself the small pleasure of eating something that TASTES good? If I'm going to feel like crap anyway, why NOT?

Bartfull - don't give up please. You tried something very new when you were stressed and under great time pressure. Perhaps you need to be kinder to yourself and stick to the things you know can work when you are in rush so that you can have some breakfast, plus some left over as food to go for lunch? Then try the new things maybe at the end of the day when you might be more relaxed?

Maybe also only try something new when you also have an emergency back up handy in case it doesn't work?

I agree quinoa is a bit funny, but it is also very bland. I find it ok as long as it is buried under something tastier. Perhaps you could make simple soups with your safe vegetables (are fresh herbs/salt ok as flavouring?) and then add in the quinoa once the soup base is made? Something like this is also freezable for a quick meal when you are rushed. Although I wasn't as poorly as you are, my system was also in overdrive at the beginning, and I ate lots of simple stuff like this for weeks (plus my mainstay of rice, chicken and veggies), and it was very soothing. I was much better afterwards.

I think you are ok with bananas? Maybe make sure you always have a supply of these, and any other portable food you can safely carry round with you to make sure you don't completely keel over with hunger if you are caught short?

I was soooo tired that day putting the mix in a saucepan and boiling the water to cook it seemed like an effort. It was so bitter it was completely inedible and I had that same disappointment you did.

Just remember that you'll probably regret that cheeseburger. Even though you're already sick, you probably don't want to explore how much worse you can feel sick AND glutened. Yuck.

If you're going to break the new diet, do you like Indian food? At least you can get something gluten-free that won't make you sicker and lots of places deliver. Heck if I was going to make myself REALLY sick I wouldn't waste it on a cheeseburger.

Why would a cheeseburger make anyone sick? OK...dump the cheese and get some buffalo meat. It is very lean, much leaner than cow, and won't cause a problem if fats are trouble right now. I still have trouble digesting fats so know what I am talking about. You definitely need to be eating protein or you won't heal. Is there any way you could get some me time? You need to plan what you'll eat because going hungry is very, very bad. All this rushing around taking care of others is not helping, but you already know that. :)

Do you use digestive enzymes at all? That may be part of the problem. They really help break down food when your gut is in not so good shape.

This is why you shouldn't quit smoking or coffee right off the bat! I've had days like that myself and it just makes you crazy.

But you need to concentrate on you and plan some meals to keep you sane. You are a good person for helping a friend in need but what about you?

I closed the shop and went to the healthfood store a few minutes ago. 35 dollars later I came back with some pro-biotics (a three week supply), an 8 ounce package of cheese, and an 8-pack of organic bison hot dogs. The hot dogs have onion powder so there's probably corn in them. The pro-biotics LOOK safe, but we'll see. Of course I checked every gluten free bread type substance they had and even the gluten free flour tortillas had xanthan gum.

My problem with cooking (besides the fact that I've always hated cooking and never learned how) is that there are so few foods I can tolerate I'm not getting any nutrition. What good is crock pot cooking if all you can put in it is broccoli, cauliflower and carrots? And regular in the pan cooking? I don't have time! I leave the house at eight every morning and don't get home most nights until nine. And now that the rest of Kelly's friends have abandonned her, I spend Sundays, my only day off, cooking and cleaning for her cause it's the only chance I get to do that and nobody else WILL do it. Her lovely insurance company won't cover a home health aid right now - they say she doesn't need skilled nursing, and that anybody can change the bandage on her football sized tumor. I'd like to SEE just anybody tackle that one. Just the smell alone will knock you over and then there is the cleaning of all the blood and pus that drips off of it. Heck, if I hadn't had EMT experience I don't think *I* would be able to handle it.

I'm stretched to the breaking point. I can't handle it anymore. You guys have been keeping me sane but I think I'm seriously about ready to go over the edge. There's just too much on my plate all at once, and none of it is FOOD. I wish I could just crawl into bed and stay there. I'm NOT suicidal. REALLY. But I WISH I was dead. It's all just too much and I'm not strong enough to handle it anymore.

I have a really stupid question. I can't find a sub-lingual B12 that doesn't have corn hidden in it somewhere. I know there is B12 in beef (and bison) but I'm not absorbing it. Do you think if I just chewed a piece of beef or bison and left it under my tongue for an hour or so, I might get some that way?

I TOLD you it was a stupid question.

Will your doctor give you B12 injections? If you set them up you might be able to just go in and have a nurse give you the shot without having to set up an appointment.

You keep referring to your shop. Are you the only one that works there? If you are, as hard as it might be, it may be time to close for at least a couple of weeks or try and find someone who can take over for a few hours in the morning or evening. I chose to close my shop and recently reopened on line so I can work the hours that I can handle as I just don't have the stamina needed to do everything myself anymore in a regimented situation.

It is great that you are there for your friend but you need to think of you also. Have you contacted the American Cancer Society or any of your local organizations to see if there might be volunteers who can help with some of her care? You're not going to be of any help to your friend if you keel over.

I'm glad you found some clean meat. Bison is great because it's usually grass-fed as well as organic. I really hope you don't get corned from the onion powder. :(

I'll tell you a secret about sublingual B12. There is a study showing no difference between oral and sublingual B12. http://online.liebertpub.com/doi/abs/10.1089/acm.2006.12.881 The health food store preparations are taking advantage of a sublingual fad. ;) People taking sublingual or liquid B12 probably feel like they absorb it better because the tablets are fully dissolving. Our digestive systems are so funky who knows whether pills dissolve right when we swallow them? Find any B12 supplement you can tolerate and crush it, chew it, or open the capsule and take it in a little water.

The rest of your situation, gosh. It sounds like you are putting Kelly's health before your own. It's a noble thing to do, but you need to find alternatives if it's driving you over the edge. Sometimes we take on a responsibility assuming there are no alternatives, but when we have to stop doing whatever it is, we find that someone else was willing to help and just hadn't gotten around to it. You need to talk to Kelly and give her the opportunity to talk to friends and family and see who will step up to the plate. Perhaps you are really only needed for the bandage change - cooking and cleaning is pretty easy to do.

If all else fails, many churches and community groups have services for shut-ins that might be able to help. You should gross out her insurance people by sending photos of the tumor. Maybe they would do something. :P

May not be feasible but could your students maybe come to your home for a bit? I know that most likely won't work but I am worried about you. Can you eat eggs? Those are a good source of biotin and B12.

First of all let me say I absolutely LOVE you people! I don't know what I would do without your advice and support. You truly are lifesavers and sanity savers. Oh how I wish I could do something for you in return. As it is, all I can do is pray for you and tell you if you ever get a chance to come to the Black Hills, look me up and we'll have a party. (I'll be serving broccoli.)

I feel a bit calmer now that I've eaten those hot dogs. I really hope there's no corn in them because they are delicious. At almost fifteen dollars for a package of eight, not only don't I want to throw them away, but I'd like to get some again.

I WAS eating eggs almost every day until this nutritionist told me not to. I'm done with her "program" though. I need nutrition and I'm not giving up my meat eggs and cheese. I'll lay off the ice cream because I know sugar feeds yeast. But in a little while I'm going to eat some more hot dogs and cheese, and tonight instead of ice cream for my before bed treat, I'll cook a couple of eggs.

I love the idea of sending Kelly's insurance company pictures! After they finish throwing up, maybe they will send help. I think the reason I've been trying so hard to help her, besides the fact that she is my friend, is that she has no family. I have no family either. I know if I were in her position I would have to depend on friends because there IS no one else. Most of the time I'm OK with no family. I miss them, but I'm OK. But when trouble strikes and there is no family to turn to it feels like walking the tightrope without a net. It's pretty scary. I DID ask Kelly to try to get someone else for Sunday afternoon/evening. I can go up and do breakfast and a bandage change in the morning, then take the rest of the day for myself. Grocery shopping, housework, and maybe even a nap. It doesn't sound like much, but it would be heaven to me.

What you can do for us is get better. Glad to hear you feel better now that you have had some protein.

I've always wanted to visit the Black Hills, but I am sure by the time I could get there you will be eating much more than broccoli. ;)

It is hard when family isn't around and it must be hard watching your freind go through what she is going through. I am sure your being there means a lot to her so do take care of yourself as much as you can.

Hi. I hope you are feeling better today after your meal. You have such a lot to deal with at the moment, I admire how you are putting your friend first when you are in equal need of support. However please do take every possible minute to rest and eat that you can squeeze out of your day. I'd bring over something for you to eat if I were a bit closer to Black Hills...(had to look that up on google, it does look beautiful!)

Good morning my friends!

The hot dogs didn't work. About two hours after I ate them my stomach took a flop. I left work early because I was afraid I would lose them pretty fast in one way or another. I ALMOST vomited, and I ALMOST had D. Lots of burping and gas pains. I'm not sure if it was something in them I shouldn't have had, or maybe it was just that they were too spicey. I'm thinking it was the spices because I have no new psoriasis today.

But this morning I cooked a steak and a great big organic yam. I'll have that with some organic broccoli. The yam is my new test. Last time I ate them I reacted badly with emergency D. Maybe this one will be OK because it's organic. It would be nice if I could eat them again. They are so nutritious and I really like them. Heck, if I could eat yams and meat and broccoli, cauliflower and carrots, plus bananas and avocados and cheese and eggs, that would be a well balanced diet, wouldn't it?

I was reading about your B12.. not finding it sublingual... i just went to look at mine as I am a newbie of this gluten free diet... mine is from sundown and it says no artificial flavor, no preservatives, no sugar, no starch, no milk, no lactose, no soy, no gluten, no yeast, no fish and sodium free,,,, hope this helps

    • I think the gene tests are accurate.  Not sure if thier interpretation of them is.   If you actually think have Celiac, you need to know that.  You  need to know how careful you must be.  You need a diagnosis to get gluten-free food in hospitals or nursing homes (if you can find one that does gluten-free food).  Because thsese "stool tests" are not medically accepted, it is unlikely that a real medical facility will consider you to have Celiac.   http://www.cureceliacdisease.org/faq/why-dont-you-recognize-tests-stool-tests-or-otherwise-for-gluten-sensitivity-that-are-currently-available-through-companies-like-enterolab-or-cyrex/
    • Why would your doctor order an endoscopy and check for celiac disease, but not order a celiac panel?  Had you been gluten free already?  
    • Thanks cyclinglady ... just wondering, do most of the people on this forum believe the Enterolab stool / gene testing to be non-trustworthy? Or are you just recommending a diagnosis from my MD so that she is also treating me with full belief/knowledge of my condition? I've been gluten free now for 2 weeks - by the time I get in to my doctor, she orders the bloodwork and I get to a lab it could be another 2 weeks before the bloodwork is done. From what I understand, just a month of gluten free eating could skew the results of the blood test. Supposedly, the stool tests are much more accurate. I hate to go backwards and start eating gluten again just so I can have a blood test done that may or may not substantiate the results of the stool / gene testing. I'm so confused ...
    • Try to stick to a whole foods diet.  Things like unseasoned stew, soup, etc.  Things easy-to digest, preferably not processed by a anyone except you.  Too often new celiacs start using gluten-free foods (cookies, bread, crackers).  Your body is not used to these grains and they often contain lots of junk.  For example, I react to Xantham gum.  It does not bother my gluten-free hubby, but it gets me every single time!   Did you read our Newbie 101 thread under "Coping"?   It contains lots of valuable tips.  Make sure those meds are gluten free.  Supplements too.   I hope you feel better soon!    
    • Here are the actual tests.   http://www.cureceliacdisease.org/screening/ Insist on the complete panel.  Let them know (your doctor) that your father had celiac disease.   Document in writing!  If you have celiac disease, your life can be improved.  All the things I attributed to aging were actually related to celiac disease.  It is never too late to feel well!  I am in my 50's but my Aunt iis 81.  We celebrate a Gluten free Thanksgiving every year!   Oh, my kid does not have celiac disease, but she is tested every few years even though she is symptom free!  There are silent celiacs.  My symptom?  Anemia.  No tummy issues.   Please advocate for your health.  Keep all records.  Doctors can not ignore written facts and requests.
