Lunch On The Go

Wondering if anyone has some suggestions for on the go lunch. I can't heat up anything and pretty much always eat in my car. I have been eating gluten-free turkey sticks and fruit or whatever. I can use a cooler so during summer take salads. Any other ideas?? I'm a little bored.

Have you found any gluten-free bread that you like? You could make ham & swiss sandwiches or roast beef or..... how about BLT?

Summer 2013 We both have added back a little soy which is near unavoidable & we are doing okay with that small amount.

I sometimes eat apple slices with cheddar cheese, a cut-up avocado, or salami with cheese and crackers. Nuts are also good, and you can substitute a nut butter for the cheese when eating apple slices. Grapes are good, too...

Hummus and sushi.

Rice crackers, lunch meat, fruit or veggies.

There are lots of exotic rices that are good room temperature or in a salad. I like to mix them in.

Chilled shrimp and cocktail sauce. Yum.

Salsa and chips and guacamole.

Buffalo mozzarella/tomato/basil/balsamic vinegar with Italian ham.

My daughter likes lettuce or teff wraps. If you can't find the teff wraps, use a corn tortilla.
