A Co-Worker Made Gluten Free Cookies!

A co-worker informed me she made some cookies. I told her my usual line "I can't eat cookies". She then told me she used coconut and rice flour! She is following a gluten free diet! I was SO HAPPY! It was so nice to be able to eat something a co-worker brought to share. Some people said they thought the cookies were a bit "grainy"...probably the rice flour...but I didn't complain at all and told her they were great! I informed my co-workers when you can't eat "real" cookies like me...you become less picky and enjoy what you CAN eat!

The cookies made my day!

Sounds great!!

Sometime later in conversation, you may want to suggest a baking mix with rice flour sit a few minutes to absorb the liquid. It makes it less grainy.

That is really amazing :-) Is she also diagnosed and 100% gluten-free? Now you can share lots of treats and not feel like the only one with "special" needs in the bunch!

I would think that cookies ARE real, just an alternate recipe to ones made with wheat no? :-) I'm happy for you!

      Trying to read my lab results

      Hi Scott, yes I have had symptoms for years and this is the second GI I have seen and he could not believe I have never been tested. He called later today and I am scheduled for an endoscopy. Is there a way to tell how severe my potential celiac is from the results above? What are the chances I will have the biopsy and come back negative and we have to keep...

      Constant low back, abdominal and pelvic pain!

      I agree christina, there is definitely many contributing factors! I have the pain today, my pelvis, hips and thighs ache! No idea why. But i have been sitting at work for 3 days so im thinking its my back. This disease is very mysterious (and frustrating) but not always to blame for every pain.

      Perhaps I should also have said that in addition to showing a very high response to gluten, her stool study showed that she had extreme reactions to everything achievement on it long course of microbials to treat that.
