I am, admittedly, a bit of food snob  so I do not know of any consomme from a can or carton, but I can tell you how to make a quick, very basic version.

You can skip making your own beef broth, if you want and just buy it.

Kitchen Basics or Pacific brand is pretty good.

Beef Consomm

3 quarts chilled beef bouillon or stock
1 pounds ground beef (free from fat)
1 carrot
2 leeks
2 celery stalks
2 egg whites
a sprig of parsley and thyme or chervil
dash of salt and a few peppercorns

Chop the carrot, leeks and celery stalks and add to a large pot with the chilled stock and ground beef.
Add 2 egg whites lightly beaten with a fork to the pot.
Add salt and herbs to taste.
Constantly stir while bringing the pot slowly to a boil, until only a few bubbles break the surface.
Stop stirring once a slight boil is reached and the raft begins to form in the pot.
Continue to simmer slowly for an hour to an hour and a half.
Once the consomm is done cooking, carefully skim off any matter that floated to the top and discard it.

Strain the consomm through several layers of cheesecloth or a paper filter before serving.

Thank you IH. I just have a few questions.

What is chervil?

What does it look like when the "raft"? Begins to form?

Do you freeze any extra?

Thanks again. I am trying to learn about cooking

You're so welcome! We all were all beginners at some point, right? :)

Are you feeling better today, BTW?
