Amaranth Leaves

Two blocks from me we have an Asian market. Last time I was in they had Amaranth leaves. They are green with some red coloring. Anyone ever had these? How would you cook them?

I treat them like spinach. If they are small, eating them raw is fine, but the bigger ones need some cooking or they're a bit tough. :-)
