My sister posted on my FB wall this recipe and I made it yesterday. It was very good, so I will share.

Ingredients:

chicken breast

bacon strips

rice flour

eggs

bread crumbs (Chex rice cereal)

Directions:

Cut chicken breast to long strips- 1 inch or little less thick.

Wrap the bacon around chicken strip and dip in the flour, egg and breadcrumbs.

Fry both sides on a low medium heat until brown.

I made it with red potatoes. I cooked them in salted water. I chopped one small onion and sauteed in 2 Tbsp. of canola oil. Then I added 1 Tbsp. of dry red paprika, 3-4 Tbsp. of cold extra virgin olive oil and 2-3 Tbsp. of chopped Italian parsley and mixed with drained potatoes. We had pickles with it, but any fresh salad would be good. Enjoy!

I used canola oil for frying. Bake them until they will be more on darker side, I pulled one erly and the bacon was to gooey to my taste.
