What is the best flour for fried chicken.I tried gluten free Bisquick,didn't care for it.(That's rice flour, I think) Can you use corn meal and corn flour? What sticks best when you fry it?

Summer 2013 We both have added back a little soy which is near unavoidable & we are doing okay with that small amount.

Gluten free bisquick is mostly corn, i use gluten-free oat flour.

I use Cup4Cup and my old recipe. Works great.
