So i have about 1/2 lb of beef thawing at the moment that i have no idea what to do with. I could make it into a pot roast or i could cut it up and perhaps make beef strips out of it.

I also have at my disposial:

acorn squash

Any ideas?

Maybe a stir-fry? If you didn't use soy sauce and Asian type flavors , you could cook the apple in, too.

Make a slaw style salad with the cabbage, apple, onion, carrots & top with a vinegrette? I love apples on salad with Italian/vinegrette type dressings. Not sure what the beef is, but grill it to go along side. Some people make squash into a mashed potato type thing. Or cook little pieces of squash in the microwave and add to some rice. Add cinnamon and cooked apples the rice.

Let me know what time to come over. :D
