I have been looking everywhere and cannot find a gluten-free cornmeal or cornbread mix. Does anyone know of one that is FOR SURE gluten-free?

Are you near a Whole Foods Market because they have a number of gluten-free cornbread mixes that are gluten free. They have their own brand and there are others.
I am a very sensitive Celiac and I have not had any problems with any I have bought there. The Gluten Free Pantry is one brand that I use.

The only one I ever had gluten free was Bob's Red Mill, it was the first one that I found and my gluten eating family and neighbors loved it.

Bob's Red Mill for me too. Made it and I had a bite or two and the Glutinator, hubs, ate the rest with a jar of jelly.

Yummers :D

We use Bob's RM for cornbread - additionally I bake it very thin to use in cornbread stuffing for Thanksgiving!

I use Pamela's and do the buttermilk version. Everyone loves it. I think they are better after they have cooled rather than right out of the oven.
