My sister makes a sweet potatoe casserole. She shared the recipe with me. Everything looks safe except for the 3 tbs of all-purpose flour. Should we substitute gluten-free all-purpose flour? If we do, do we need to add the xantham gum. Or should we substitute rice flour?

No, just sub the gluten free flour. The gums are used for structure in things that have to rise and hold together. :)
