Have you had your thyroid checked?  It is quite common to have thyroid issues with celiac and if you are eating that much and not gaining weight you could have hyperthyroidism or have some other condition that is preventing you from gaining weight.

I always do all gluten free too - I tell people to bring the alcohol and we'll do the rest.  I don't serve much gluten-free pasta to guests (although I will do lasagna which I can do vegetarian too).  I serve bread but am pretty careful about it because most people aren't always prepared for the taste so I'll do gluten-free croutons on a Caesar salad or chebe frozen cheese rolls (those never get complaints) or cornbread.  At breakfast I'll serve Joan's bagels or English muffins.  If I have a vegan I'll do something Asian or Indian as those are usually dairy-free.  And I can do lots of things corn and soy free too.  I make all of my sauces and dressings from scratch so it's easier to manage guests with issues.  

My tried and true entertaining meals are:

Appetizers:  antipasto, chips and salsa, spring rolls
Salads: caprese or Caesar salad
Soup:  chicken tortilla, Italian vegetable, Chili (last two can be vegan or vegetarian) or egg drop
Entrees: lasagna, baked chicken legs over mashed potatoes with mushroom gravy and green beans, fish tacos, pho (beef or tofu), grilled salmon with asparagus and wild rice, pork chops with pineapple fried rice
Desserts:  cheesecake, key lime pie or pumpkin pie or sobert if I'm lazy

Synthorid is gluten free.  You should consider it a myth that any thyroid medication contains gluten until proven otherwise.  About 80% of my endo's patients are celiac or gluten sensitive and he's never once mentioned that Synthorid contains gluten and has prescribed it to me when Armour isn't available.

Many pharmacutial companies will not guarantee a medication is gluten free but Synthroid does not contain ANY gluten ingredients.  There are many, many people on this board taking Synthoid and generic equivilents without issues.  Many medications have additives (like blueanj mentioned here) and I am sensitive to dyes - that could be your issue or it could be the corn starch as you said.

If you continue to have issues you can try a natural version like Armour or have it made for you at a compounding pharmacy (I've used this one in the past when there was an Armour shortage - http://www.wellnesshealth.com/)

BTW - This site is invaluable when researching drugs.  Bookmark it because it's hard to find:  http://www.accessdat...atfda/index.cfm   You can find the prescribing sheets and active and inactive ingredients for the name brand and generic equivilent (even by manufacturer) - click on theraputic equivilent on the page for the name brand to see a list of all of the manufacturers who make generics.

Good luck!  Things will get better for you.  It's always difficult in the beginning to figure out exactly what is causing things and as you heal things will bother you less.  

I don't trust anything prepared from Whole Foods.  I'm always surprised how unaware they are of gluten-free in that dept as they label everything vegan, etc.

I had absolutely no problems in Ireland.  It's the most celiac friendly country I've visited.  gluten-free food is everywhere and everyone you meet knows all about it - even in the smallest towns.

Actually, I just found out that what the pharmacies have been passing off as the "new Armour" is actually NP Thyroid and not made by the same company at all so
Armour made by Forest is still okay but NP Thyroid made by Acella DOES contain gluten. The 60mg tablets have an AP on one side of them and 330 on the other side and Real Armour only has an A stamped on it. Yes Synthroid does contain gluten now.

Where did you verify that Synthroid contains gluten?  I haven't seen anything in this thread that suggests anyone has called the company to confirm.

Acacia, confectioner's sugar (contains corn starch), lactose monohydrate, magnesium stearate, povidone, and talc.

I am a longtime fan of Kirkman Labs - all of their stuff is high quality and reasonably inexpensive.  They take allergens very seriously and it's the only vitamin brand I've never had a problem with (I'm pretty sensitive).

Lexi I understand your frustration.  I've been at this for years and my family still insists that it's not fair for everyone to have to eat gluten free on my birthday.  So, for the first few years we had two cakes and I had to put up with children going "yuck gluten free stinks" and feeling sick because my gluten-free food really wasn't because there were two dishes of everything made in the kitchen at the same time right next to each other.  I even had my ex mother in law stick a piece of cake in my face once and say "look what I can eat you can't haha."  So my solution for the next few years was to stop eating their food and make my own birthday cake and still put up with their crap.  But now I realize it's my birthday and I call the shots.  If it doesn't work for someone they don't have to come (and some don't and others just aren't invited).   It's taken years to get my birthday back and find a solution that makes me happy.  It stinks that it has to be that way but they are the insensitive ones and it's not my problem on my birthday.  I wish things could be different but this is reality for me and I accept it openly - it comes with the territory.

I'm sure next year will be better!   And, you are not alone by far.  An accepting family is an exception most of the time

My everyday salad dressing is:

1 teaspoon Grey Poupon (not sure if it has corn though - might want to check)
1 teaspoon Balsamic Vinegar
2 tablespoons Olive Oil

a little minced garlic, fresh thyme, salt and pepper.

Your experience is quite common and very frustrating.  Over time you'll learn to ignore them.  The saddest thing about your experience is that these are medical professionals and they are obviously ignorant about a very common condition.  Their lack of compassion is also very disturbing.

My Endo thinks that anything above 2 is cause for concern especially if you are exhibiting symptoms.  I tend to agree with him.
