I find that I don't like the stuff made with bean flours because of the aftertaste. I don't know that I would call it a "freezer" taste though.

Yep . . . what they've said above!! I read that article and some of the things that immediately came to mind is . . .

At some point in this series they are going to try and sell me something. Also keep in mind, they are publishing a "series" to make you keep coming back to get more hits on their site. The more hits they get, they more they make in advertising. Plus, reading in the comments section, I saw a reference to testing from Cyrex Labs with a "stay tuned" from the article's author. Yep, they're going to sell us something . . . a product, a test, a guide to health.

The other thing I want to point out is that they use a lot of "scary" quotes/data from legitimate sources. However, to really understand those quotes or data, you need to go and read those publications in their entirety. You need to see the context of that information. It's easy to lift a quote and leave behind the explanation.

crumbs? Don't we recommend that people get gluten-free pet food so their pets don't lick them w/
gluteny tongues? Like I said, it really is ok if it's just me, was only trying to give examples
of how hard it is at first (it was for me anyway, and again it might just be me) to remember

Just wanted to chime in with some support.

Do I think that there is enough gluten in the gluteny shampoos to cause a reaction? . . . Don't know, haven't called any companies to find out what the ppm is.
Do I think having dry hair blown into my mouth once in a while will transfer enough gluten to cause a reaction? . . . Not by itself
Do I think Celiac/NCGI people have to give up their favorite gluteny shampoo? . . . No
Do I think Celiac/NCGI people who use gluteny shampoos need to be diligent? . . . Yes
If I had Celiac, would I use/switch to gluten free shampoo? . . . Yes (there are plenty of mainstream brands to choose from)
Do I think people have their hands to their faces/mouths a lot more than they think they do? . . . Heck Yes . . . and as luck would have it, as I sat back to read what I wrote so far, I put my hand on my chin and my fingers were touching my lips.

I don't have Celiac, but I prepare the majority of my daughter's meals. I constantly tuck my hair behind my ears. I do not wash my hands everytime I do that. Based on my daughter's history, it takes cumulative small exposures to start a significant reaction. I don't know when, where, how much, how often these small exposures take place? I do know, for her, it's cumulative. So doing something like buying Dove Shampoo and Conditioner so that it's one less thing I have to worry about "accumulating" is well worth it to me. I don't look at buying gluten free shampoo as adding stress, I look at it as eliminating it.

And yes, when I had long hair, it occassionally blew into my mouth on a windy day.

Hang in there!! It'll get better Persei . . . and I would bet that you will get most of those foods back once you are fully healed.

I recommend a digestive enzyme. It really helps my daughter . . . whether is was a glutening . . . or something just didn't settle right . . . or it was all just sooo good that she ate way too much.

OK, I know you were wanting stuffing ideas but I just need to talk about pumpkin pie :rolleyes: :lol:

The first year or two, my mom, the chief cook at Thanksgiving, just poured a bit of the pie filling into a custard cup and baked it like that. (If you follow the recipe on the back of the Libby's can of pumpkin, it's already gluten free).

At one point, I just poured a pie's worth of filling into a pie pan (sprayed with Pam) and cooked it till it passed the done test. Made another pie using a store bought crust. The crustless pie went first . . . had to fight people off to make sure that my daughter got some . . . everyone was looking for ways to reduce calories or cut carbs. Who knew?

It looks overwhelming at first . . . but you'll be surprised how quickly you get a handle on this gluten free thing. My daughter was diagnosed over 5 years ago. I'm amazed at how much easier it is to find gluten free products (I can get the majority of my gluten free products at my local Krogers) and how much better the overall quality and selection is.


We are a mixed household. It's really not that hard to do. All my cooking and baking is gluten free. I only "cook" one meal for the family and adjust the bread products accordingly. For example, tonight we had cheeseburgers and mac & cheese and veggies. The cheeseburgers & veggies are naturally gluten free, the mac and cheese, which were left overs from the other night, were made gluten free, the gluten eaters got gluten buns, the gluten free eaters did not. (My daughter actually prefers her cheeseburgers bun-free ;) ) It's really not too difficult to turn your current gluten meals into gluten free meals. Just ask for help with substitutions . . . there are lots of people here who have already been through it.

The gluten items that come into this house are all prepackaged kind of things . . . cereal, bread, crackers, cookies. The rule was (aimed at my son the gluten eater) if we didn't keep the kitchen clean enough or if we cross contaminated my daughter's peanut butter, butter, cream cheese, etc then I would take the whole house gluten free. Five years in and we are still good.

This is a list of companies that do not hide the gluten in their ingredient list. You just read the label and if you don't see wheat, rye, barley or oats listed, then it is not in there. Most celiacs can eat such a product . . . some sensitive celiacs may need to do further investigation to determine if the facility or equipment is shared with gluten containing products.

When Udi's first came out with their hotdog and hamburger buns, I was excited to get some for my daughter who had gone without for so long. What happens when you do without for years? Your taste buds change . . . you develop a new norm. She hates buns on her hot dogs and hamburgers. "It's too dry. It soaks up all my ketchup" :P

What do you do with a package of hotdog buns? I make little garlic breads out of them for spaghetti night . . . she loves them. She loves the buns, just not on her hotdogs. :lol:

Udi's and Rudi's are interchangeable here. All depends on which one is on sale. I love that I can get them both at my local Kroger and it's cheaper than Whole Foods.

I've used the Ener-G bread for bread crumbs. It was fine in the finished product but even the smell is bad . . . way too yeasty or somethin'.

I was just told today that my biopsies were positive. I'm trying to think about my life without a lot of my favorite foods. I know i'm going to go gluten free but seriously, is it a HUGE deal if i cheat once in awhile? Like even once a month on a favorite meal out, etc. I have no symptoms by the way. Thanks



I have to ask . . . if you had no symptoms, why were you scoped? Something must have been going on :huh:


I think you've got the gist of how people feel about cheating from the previous posts. I'd like to give you some advice on how to NOT cheat.

You're better off planning these things ahead of time as I think cheating, in general, comes from when we are not prepared for a situation we find ourselves in.

What's your favorite gluten meal? What's your favorite gluten treat? I suggest that you ask here and you will get plenty of help with recipes and substitutions. Start working on a good replacement before you are really hankerin' for that chocolate chip cookie. Come here for recommendations on where to eat out . . . our family favorite is PF Changs. When somebody brings donuts to work . . . treat yourself to a snickers bar. Research ahead of time what you can get at a few local places (Wendy's frostys are gluten free).

It's all about planning ahead and not feeling deprived.

My library has ebooks to check out . . . now I can go to the library by visiting their site . . . love it. I still pick up books at yard sales because every so often, I don't want to take my kindle somewhere, you know, "dangerous" . . . plus you run into books that you want to read that aren't electonicalized or aren't carried by the library that you want to read.


One of my favorite features . . . the later in the day that it gets, the more tired my eyes get . . . and the bigger the font becomes on my kindle :rolleyes:

And, truly, I can't emphasize enough how strictly I'm following the diet - all kitchen items replaced, very infrequently dining out at and always at locations with gluten-free menus and accommodating managers. I am taking vitamins in response to bloodwork results and everything else seems to be fine, medically speaking.


You seem to be on top of the diet requirements but I just want to mention a couple of things. If you have done these things already, then maybe it will help somebody else following the thread.

Have you checked all your medication/supplements? Simple things can trip us up. I bought advil gel caps recommended by my TMJ doc because they are faster acting. I knew that advil was gluten free. . . but wait . . . the advil gel caps are not!!!

Check toiletry items. Some people can handle wheat germ oil in their shampoo, but I don't trust my daughter to keep it out of her mouth. Plus, does it leave a residue on your hair (once again, I don't know) that can then be transferred to your hands (I'm constantly tucking my hair behind my ears)? Some lipsticks have gluten . . . definitely a no-no. Stuff like that.

The other thing that comes to mind is "pre-contaminated" items in your kitchen. I know when I baked prior to my daughter's diagnosis, I would use the same measuring cup to measure (wheat) flour then tap it against the bowl to knock off the dust and use the same measuring cup to scoop out sugar, thus, contaminating my sugar canister. Items that you would have doubled-dipped like peanut butter and jelly that could now have crumbs in. I know you started a while back and if your house is anythig like ours, peanut butter and jelly has a high turnover rate . . . but that was just an example to get you thinking if there might be something in your fridge or pantry that you used before diagnosis and are still using.


The only other suggestion I have is to try a good(gluten free)digestive enzyme. That has helped my daughter recover more than anything else.

We just updated our family room TV to LCD a couple of months ago. I thought we were the last ones but I guess not. We only got the one new TV, so the TV in the bedroom and the one in the basement that the kids use when we tell the to "go away, this show isn't for you" is still the old stuff. St Vincent DePaul wouldn't even take our old TV (and it was nice, cable ready, still working . . . and heavy as he11).

I really like Better Batter flour; so far it has worked in everything I have tried - but it is expensive and you have to order it online.


Not necessarily . . . I ran into it at a health food store the other day. You can check their website for locations, but it's not up-to-date as the store I saw it in wasn't listed. I think they are doing pretty well so I wouldn't be surprised to see it in more places . . . may take a while to get to you though.
