#832495 Glutamine

I use L-Glutamine as well. I only wish I had started using it when I was first diagnosed so that I would have healed a little quicker.

#832494 gluten-free Cornbread/ Cornmeal

I use Pamela's and do the buttermilk version. Everyone loves it. I think they are better after they have cooled rather than right out of the oven.

#764042 The Hardest Part About Celiac For Me Is...

Posted by Jenny (AZ via TX) on 11 January 2012 - 09:41 AM

I miss being able to be spontaneous and not have to plan everything. I miss being able to go into any restaurant or someone's home and share food, both theirs and mine. For the most part, I'm good with the diet. I never cheat and don't really think about it when I'm at home because I know my food is safe for me to eat.

I have not been back to New Orleans in 5 years. I handle cravings pretty well, but I don't know if I could do this city without really wanting to cheat. I'm originally from there, but grew up in Dallas. We would visit every year and I still have family there. I know it sounds terrible, but just can't do it yet. I miss that!

But overall, I don't worry much unless I'm traveling.

#629802 For Those With Hypothyroidism

I take my thyroid meds in the a.m. and p.m. I think this is done more with the natural dessicated thyroid medications.

#483570 Banana Nut Bread

Posted by Jenny (AZ via TX) on 10 November 2008 - 03:53 PM

I made a banana nut bread the other day. I converted a recipe I have that used wheat flour. I used a flour that says you can use cup for cup. Anyway, it looked beautiful when I took it out. Then a while later it collapsed and was really heavy. I like the recipe because it uses honey and molasses but the outcome not so good. Hubby still ate it. He said the taste was good but was kind of chewy. I thought it tasted good but couldn't get over the texture.

What went wrong?
