Leftover scalloped sweet potatoes and ground beef


I replaced the flour with cornstarch and used wheat free soy sauce. It is probably more of a fall recipe, but it was actually a little chilly in my area yesterday and felt like fall so it was fitting. I am looking forward to the leftovers. I LOVE sweet potatoes!

I got called in to work a temp job today so it will be a super easy "hamburger goulash". I chopped an onion, put it in the crock pot with a pound of ground beef and a can of Progresso cream of mushroom soup and some additonal mushrooms. I will serve with Sam's Mill corn bow ties or microwaved baked potatoes and a yet to be named green vegetable. Have not decided yet........

I find rice flour can be gritty. I found that my local oriental grocer carries rice powder. I use the rice powder in place of rice flour in some of my flour blends. It is not gritty at all.
