My father has Celiac Disease and has lived a gluten-free lifestyle for probably 10 years or more - therefore it is a lifestyle with which I am very familiar. It has been speculated that one of my sisters also has the disorder, although she has not been diagnosed with it but with Crohn's, IBS, and has ulcer issues. It is also believed that my father's sister has Celiac Disease and has probably been fighting it for many many years but has not been diagnosed.
I have had symptoms of celiac disease since probably only the start of 09, but they came on with a vengeance. My fiance jokes that I have reached the human threshold for bread consumption. As my screen name depicts, I am quite a fan of bread. I burn quite a few calories during my day and carbohydrates and gluten-rich foods have been my friend as long as I can remember. I also ate a lot of whole grains while maintaining a diet rich in fish, chicken, grass-fed beef, omega 3's, fruits, vegetables and dairy.
Now, in June '09, I am starting my 'elimination diet' and cutting out every possible gluten source to do my own scientific study:). I have no reason to believe it is anything else causing me these issues after other such elimination diets.
As I work through this elimination diet I am interested to follow the forums and learn what other people are dealing with - and make sure my experiences are consistent with some of them.
