IBS is a symptom of something else, you have an irritable bowel from something.
I think if you really buckle down you will start to feel better. You need to not use the same condiments that have had a gluten knife in them- peanut butter, jelly, mustard, mayo, butter, etc. You will need a new toaster-because of gluten crumbs- and if your non-stick pans are scratched you will need your own new pans for gluten-free only, any wooden kitchen ware that has had gluten containing foods on it is contaiminated (CC) and can make you sick, scratched plastic needs to be replaced also. If your SO eats gluten you can get CC from kissing them before they have brushed their teeth. There are some people here that 'just a crumb' will make them very sick.

The Dr. who did the biopsy may have missed the damaged areas, damage can be patchy, or maybe didn't do enough biopsies. Since her blood was positive you should try gluten-free and see if it helps her.
Can you list the blood tests and ranges for your children? There are many people here that are very good at understanding the results. Also to make sure they have had all the correct testing for celiac. Other testing you could have done is vitamin and mineral levels to be sure they are not deficient in any of those. Vitamin deficiencies are also symptoms.

I think I have seen to trial gluten-free for two to three months. If you are planning to do testing, blood, endo/biopsy, you should do that first because if you stop eating gluten and then get tested, your tests will not be accurate and you will need to go back to eating a gluten filled diet for three months and then get tested.

Rice cooked separately

chicken breast cut into cubes
rice, I like jasmine
chicken stock
salt, pepper
garlic and onion powder
frozen peas and carrots
Cook the chicken till almost done in a little oil, salt, pepper, garlic and onion powder. Add chicken stock, I use whatever amount of liquid the rice calls for. Add rice and peas and carrots, cover till rice is done. Sometimes I will add a pat of butter and stir that in.

It sounds to me like you are having withdrawls. You could try to eat more protein to help keep you full and possibly eat more meals and snacks throughout the day.
Can I ask what food you are craving? We might be able to help you with a gluten-free sub.
