#950269 Gluten Free Label With Less Than 20 Parts Per Million

A little over a year ago I attended a one day workshop led by Shelley Case, author of "The Gluten~Free Diet, A Comprehensive Resource Guide". She has worked extensively with both the U.S. FDA and Canadian version (CDR - I believe I have that correct) in regards to gluten free labeling. She is extremely well educated and knowledgeable when it comes to the Celiac disease. According to her, when a product is labeled gluten free, less than 20ppm, then the company has indeed tested for that. She further stated that the majority of company's do, in fact, test for less and most labeled products have far less than the 20ppm even tho not so stated on the label. A food product company does not want gluten free/celiacs to consume their product and then get sick. It makes sense. Eat a mislabeled product consumer get sick, they stop buying said product. The food companies want you to buy their product. A consumer also needs to keep in mind that when consuming a gluten free food product you are also consuming a list of other ingredients (maltodextrin, maltose, soy, xantham gum etc) any number of which can cause "glutend" type symptoms.
Also, if you safely consume a food product that has 5ppm but eat four or five more food products all containing the same 5ppm then you can exceed what is considered "safe" over the course of a day.

For what it's worth. For myself, everything Shelly Case had to say made perfect sense.

Having suffered from (at times) severe constipation all my life, my first reaction would be to say that there is no protein in your breakfast.  You start the day off with sugar.  Natural, but sugar none the less.  I might switch things around a bit and have your lunch items for breakfast.  Throw in a nice piece of chicken (or other protein) and veggie for lunch and then finish off your day with your usual.  Add more dark green veggies, protiens and lots and lots of water to your diet.  See how that helps.

I couldn't agree with all of the above comments more!  Although there are no longer children in the home it doesn't matter.  Our home, our rules, our food, our way.  Period.  End of discussion. Our home is gluten free for the safety of those who live here.   We have friends/family that come and stay for several days at a time. We have no problem feeding them during their visit but it's our way.  There is one friend who (sadly) cannot live without her daily dose of bread/bagel/whatever sp she runs to the corner store and finishes eating Before coming back into the house.  If someone had a nut allergy would you bring and eat nuts in their home?

#937332 Paleo Diet... Did It Really Help?

We have been eating paleo for the past year (plus) and try to be strict about it about 90% of the time.  We eat out a couple times a month so that's pretty unpaleo!   It took about 8 months before I really started to feel a big change and then literally one day I woke up and felt better, more energy, not as much (ahem) constipation,  off all heart burn meds.  I really believe in it, have read several books and can honestly see why we shouldn't be eating any kind of grains including the gluten free ones.  Yhe book I am reading right now is The Paleo Approach by Sarah Ballantyne.  It's pretty intense as far as details as to why you should or should not eat certain things.  Although I do make rice or tacos, etc. every once in a while I have every intentions of maintain a paleo life style.  And once you get into it, it is so easy to cook most of the recipes.  I do not bake though.  Nope.  Not at all.  Not a baker!

I understand the need for the vet prescribed diet.... but I am going to object a little here. And some of you may disagree but that's ok, I'm going to stick my neck out here anyway!
We currently have three dogs and prior to this had five, the oldest being 18. A couple of our furkids were given vet prescribed foods for various conditions. Once I went g.f. we put the kids on g.f. food as well, chucking the special pricey vet food. After doing a lot of research we felt that most dog foods, even the "pricey" ones are filled with useless grains ~ rice, wheat, oats, barley. Dogs were not meant to eat grains. Grains make for good food filler but do nothing for the overall health of the creatures. Once we went grain free for our pups skin issues went away, no more flaky itchy skin, tummy upsets went away and the two that had been on "special" diets got better.
That said, and I know some will not agree with me, research the pet foods and then decide for yourself. I, personally, do not believe in vet prescribed foods and would cook for my pets before giving the vet foods to them.

GFinDC - I agree!   Sometimes we have glutened-like symptoms after eating and/or drinking but those symptoms are Not related to any gluten at all.  Read the ingredient list.  Take note of all of the additives and chemicals that are in candy bars and soda's (not to mention other processed foods).  Those additives are most often the cause of our discomfort!

I will still say wheat is wheat is wheat.  If you are celiac then you are playing with fire to eat it.  Period.  You may not get sick but the damage is being done anyway.  Three days, three weeks, whatever, of carefree eating wheat simply does not seem worth the risk of what I may be doing internally.  But we all are free to make our own choices.  If I ever am lucky enough to make it to Italy I will be enjoyuing whatever foods are available minus the wheat.  My choice.

Education as others have said.  Sigh!  I get the "Well, it won't kill you like a peanut allergy will".  Well, probably not but do you want to hold my head while I puke and pass out for hours???   A co-worker told me it was just a diet thing and I would be fine.  A good friend rolled her eyes like I was making things up.   Takes time  for other around us to get it, and to some extent they never will unless they live it!  

My daughter (who really needs to be g.f but we won't go there) tried for two weeks.  She called me crying and said "Mom.  How do you live like this".  At this point in my life it's pretty easy.  Four years ago I would have been crying right along side of her.

I have posted on this before as it has been the story of my life and even at 4+ years post diagnosis is still a problem if not very careful.

I have tried every suggestion given and finally came up with my own cocktail.

Water, water and more water.  Veggies at every meal.  And I mean lots of them so that your plate is 3/4 veggie and 1/4 protien, walking.

That's the natural stuff. 

I use Smooth Move herbal tea and that "breaks the dam" every time.  I started out using the tea nightly and did so for a year.  After a year I was feeling a little healthier and so then I tried every other night, and things worked!  After 4 years I now take the tea every three to four nights and can stay pretty regular that way. 

The other thing I learned is to visit ythe bathroom at the same time every day.  Retrain yourself just like we trained our babies.  Same time every day, whether you go or not give it a try. (TMI right?  lol)  We have been used to no results for so many years that our body has forgotten how to be regular.  We have to retrain.

And, as stated above, Miralax is also quite safe to use.  If I am ever so bad I try the tea and one shot of Miralax and that works. 

My doctor told me once that it was better to get things moving that to risk the results of a complete blockage.  Get things working again and then work on healthier ways to do it.

Just a thought

Paleo is an excellent diet to follow.  My fav book is Practical Paleo by Diane Sanfilippo.  I started out a no cook (a serious no-cook!) and her easy to follow, simple to use recipes are great.  Plus she has some simple easy to follow 30 meal plans. 


When you replace processed gluten  foods with processed gluten free foods you will probably have trouble because of all of the ingredients that are needed to create that food.  Eating simple foods is the best way to heal.  Roast some veggies and a piece of chicken and you are off! 


A note ~ pop corn is very very hard to digest especially if you are still healing.  It was a year before I could eat it.  In the beginning after eating a handful I felt like I had been glutened.  So keep in mind that it isn't just the gluten you have to watch for but all of those ingredients in processed foods.


Two weeks isn't very long and although you are young and your body will heal fairly quickly, it takes time. 

Sounds like you are on the right track.  I would give it time.  Watch your foods, maybe make a food diary so you can track what food you react to as you may have some other hidden intolerances as well.   As long as you keep feeling better overall, aside from some little glitches, I would say keep up the good work!

They use Udi's buns.  Udi's required that the restaurant go through training on how to handle the product.  they have special toss away toasing trays etc.  This info was given to me by the kitchen manager of our local Red Robin.  I travel alot and the awareness all seems to be pretty uniform.

After 3+ years I am pretty comfortable with Celiac and the whole taking my own food to friends or if we eat out etc.  The things that still (!!!!) set me on edge is when I nicely say "No thank you, I have Celiac and can't eat gluten" or  (because more people understand this) "No thank you I have a lot of food allergies" is when they respond with "Oh I am so sorry. How hard for you"   I want to respond with "I'm not.  I'm the healthy one"!!!   Grrrr.  Just needed to vent that.     :angry:


And may I vent one more thing?   We are visiting with our BFF's for a week.  My BFF declinded a dinner invitation that had been extended to all of us that she didn't want to attend using me as the excuse.   She told that hostess that because I have celiac it was too hard for me to eat at someone else's home.  That made me so mad!  Let me determine how i can or can't do my food, if I can go to someone's home or not.  Don't use me and my disease because you don't want to do something.  :o
