We are going over to my mom's house tonight and we are making chicken parm (the chicken is breaded with almond flour and we are using homemade sauce), salad and Annie Chun's pad thai noodles as the pasta.

For dessert I am trying Pamela's vanilla cake mix and I am making a peanut butter cream cheese frosting.



That sounds delicious! Way to go. Hi 5 ^^^! :D

I had a 2 or 3 week old cabbage in the frig and decided today was the day, I had to cook that head of cabbagge! (I am a master procrastinator.) I finally dedcided on Hungarian cabbage casserole after persuing several recipes online and reading all the reviews. I added sauteed ground chicken, ground sirloin and ground Italian sausage so that it could be a lunch for several days. We need our protein!

It was good, but wasn't done until about 30 minutes after DP's charcoal grilled chicken was done. Happily, I called my neighbor and asked if she was up for another wierd lunch for work tomorrow. She's a good sport and said "Bring it on". She was actually very happy about it. At the end of the day, I'm happy, doubly so because I made dear neighbor happy. (I told her it wasn't especially good, but included all food groups except fruit. So I took her a pear too. I'm pretty sure she'll love the pear. :D

marilyn: me and you could totally hang :D i think we smoked a chicken the same day lolz!!

hubby has been frustrated because he was afraid the Big Smoker Grill would make me sick and he bought a smaller bullet one to use - which he hates - ("i can't get the temperature to stay right! rawrrrr!!") so a few weeks ago, he reseasoned the cast iron grates on it and we smoked a pork shoulder. i did not get sick!!! yay!!! so we have been smoking *everything* :D our neighbors are drooly :D might do a salmon this weekend!


DP loves nothing better than smoking, watching sports and drinking beer. We live in the deep south so he gets a bit warped in the summer, the sunshine adds too much heat to the smoker! I really need to buy an umbrellla stand and a SUVP umbrella or some shade cloth for him. That whole chicken was on sale for a little over $6. I had it every day for lunch this week. (Greek salad, rice mac & cheese and smoked chicken, chef salad, smoked chicken on bagel chips and fruit salad. There's still enough left for pizza tomorrow (with pesto) and I'll probably be able to teach the dog a few more tricks with it. (Because it's smoked, I'm okay with using it more than 3-4 days.) He smokes whatever pork is on sale, and what's left over is always good for soup or etc. And yes, our neighbors are torturted too. I buy him some gluten-free beer occasionally for his grill adventures. I used to have to watch him like a halk, it was just nature for him to pour beer on the hunk of meat. He's been a Dennis the Menace, but he's finally got it down.

Way to go on reaseasoning the smoker. He actually bought a new one, but it was an end of season sale at a big hardware chain and got it for $40.

We're smoking duck this weekend. A Kentucky ducky Derby weekend, he says. I got him some Mexican beer to, because it's Cinco de Mayo. Duck is a little more involved, but it is out of this work and Duck Soup is over the top!

I don't have a reaction to Skippy brand, I buy the natual super chunk style. I like that brand because the peanut butter doesn't separate and have to be stirred like most of the other "natural" brands that don't have additives.

Could the heartburn be from anything else you ate today or last night? Heartburn isn't one of my issues, but I'm pretty sensitive and Skippy on apples, bananas or a rice cake is breakfast or a snack a couple of times a week. One of the difficult things in figuring out what bothers you is the delayed reaction. Mine usually occur anywhere from 22-24 hour later, but I've had a couple of instances when it was only 1/2 hour later. It can be confounding! Good luck, hope you feel better! :)

DP smoked a chicken today, just the way I like it. No sauce. Just mesquite chips and coal.

We had that with Greek salad and Glutino parmesan garlic bagel chips. WalMart is carrying them! Stonyfield Chocolate ice cream for desert.

Yesterday he smoked spare ribs I'd marinated overnight in papaya, cinnamon and brown sugar, then gave him a mop sauce of organic apple cider vinegar, minced jalopeno pepper, parprika and water, reduced. I had roasted root vegetable salad, he had supermarket potato salad. The ribs were fabulous! :)

I have three 9 year old boys in my house. We are eating whatever I find in the freezer since I can't get rid of the two that aren't mine. Hubs is on the golf course in 100 degree heat so there's no relief (or trip to the store) in sight.

I just fed them the last of the retried beans and corn tortillas. They'll be chewing on my ankle next.

I've got to get a new plan for boys that are rapidly getting bigger than me.


Lol! I got a kick out of your post, prickly. My mom always fed us pancakes. My brothers would eat over 10 of them. One is 6'6", the other is 6'2. We're in our 50's now, but that brought back some good memories. We all loved split pea soup with ham or sausage too. She made huge pots of pea soup. That's a love or hate thing though.

We had pizza with smoked duck, onion and greek olives. It should have been good, but we smoked the duck with orange sauce and it made for a really wierd taste combo.

Dear Wigglebutts (dog) was extraordinarily pleased because once we started picking the duck off, the pizza tasted good, and she LOVES duck.

So we had Friday pizza night with an ecstatic Wigglebutt. (Not her real name, but should have been.) At the end of the day, I can't ask for more than that. It was worth weird pizza. She felt like a slum dog millionare according to DP. (Wigglebutts is a rescue.) :D I'm still not sure who rescued who. She really helps the happiness factor. I would have been distraught that my pizza was a failure before I got Wigglebutts. Now we're all going to bed happy.

We had grilled skinless chicken thighs and brown rice spiral pasta with black olive garlic basil parsley pesto sauce. I counted the herbs as a veggie, bad me. B) It was good!

Hi Rashy,

My mom was diagnosed with it at Mayo Clinic in the early 1980's and was non-compliant the rest of her life. And she was an R.N. She lived in the North and I lived in the South and called her 1-3 times a week. I could always tell when she was about ready to crash so I'd fly up there and get her pedialyte and start her on bananas, rice, clear liquids. Then mashed potatoes. Then poached chicken. I'd keep her out of the hospital, and cook and freeze things for her to eat. She was a depression child and couldn't deprive herself of the foods she loved most, and there was no way I could talk her out of it. She would get angry when I would bring up the subject. Her role was mother and I was her child and even though she respected me, I realized early on she would never listen to me about celiac disease. When I came down with it, she told me it would be very difficult at first but I'd build up a tolerance to it (from her hospital bed in the nursing home she'd been in for six years).

So, long story short, if you have the names of the doctors your dad sees, I would write them a confidential letter identifying the symptoms your father has and request further testing. Keep it short and sweet and to the point, if you're typing it use a large font. Attach copies of pertinant medical articles for the doctor's perusal if they're interested. Include your father's DOB in the letter. If he hasn't listened to you so far, he probably won't listen to you about celiac disease. Your best strategy is to inform his docors and hope they will test him & he'll listen to them. If he's really bullheaded like my mom was, it just may fall on deaf ears, and you'll still love him for all those reasons you love him. I've worked in sales for 30 plus years and I couldn't "sell" Mom on gluten-free. I know it's painful to see those you love suffer when you're pretty sure you know the answer, and they choose to deny. Hope this helps out with the situation, let me know.

For the record, I've lived in my home for 12 years. I don't have a self cleaning oven and I used to cook yeast pies, breads, crumbles and all that in my oven. I'm ashamed to say I haven't cleaned the oven in 12 years. It has gluten globs of stuff on the bottom of the oven from stuff that has seeped out while cooking. If anyone can explain to me how the gluten from those burnt globs at the bottom of the oven can jump up in the oven and get into what I'm cooking, I just might get inspired to clean my oven. Meantime, I don't like the chemicals in oven cleaners and haven't felt the necessity because I've never been sick from anything I cooked that was safe in my own oven. I cover my old cookie sheets and pizza pans with parchment paper before cooking stuff that is safe.

The person I bought the house from wasn't gluten-free, so I'm pretty sure I have 20 years worth of gluten in my oven. Frankly, it is the least of my concerns. I could be wrong, but I don't think burnt stuff in the oven can contaminate what you're cooking if you're cooking using safe practices and safe food.

I'm open to theories though. Particles of burnt gluten going airboarn at a certain temperature and landing on your entree? (Mine just lay there in a lump.)

Sorry, just had to mention that this comment "I also react to ovens that are normally used for gluten baking. Not everyone here does, but there are many that do--including my boyfriend" is not substantiated. (No medical or scientific articles to back that up.)

It's been questioned before. No offense to the OP, she's given me good advice before, but I personally do not agree with the oven advice. I'm very sure it it irrevelant. :angry:

I tried baking muffins that I've made before that turned out good then, but used almond flour this time instead of a gluten-free flour mix.

They ended up flat and ugly and not done in the middle but crispy on the top. I pouted and ate one.

I was astonished to see that DP polished one off out of the muffin tin. I questioned him about it, whether or not I should throw them out or save them. He told me to save them, "they're good" and said "Babe, not everything is going to taste like a Hostess Cupcake."

Guess I'll keep him and the muffins. :D

#783177 How To Read A Lyme Disease Panel

So my saga begins with my neurologist suggesting a Lyme Disease panel. I told her I didn't think that was pertinent, (I live in the deep South) but consented to the blood draw. Nobody called me after the test results, and I wasn't concerned, so I didn't call. (Old news for anyone who followed stupid doctor thread.)

Four months later, when I was following up with my PCP, she poked on the wrong box on her computer screen and told me I may have Lyme Disease, she'd call the Neurologist and if I needed to do anything, I'd get a phone call.

The neurologist reported a case of Lyme Disease to the Community Health Dept. 4 months ago (me), but didn't notify me. PCP's medical assistant called to tell me to pick up an rx for antibiotics and see the Infectious Disease specialisit. I didn't pick up the rx.

It took a few weeks to get an appointment with the specialist, and I had to jump through a few hoops just to get the appointment.

He was great, had a cracker jack sense of humor. He questioned me intensively about any possible tick exposure. He said in his opinion,, I had about as much liklihood of Lyme disease as I had in winning the lottery.

On the Lyme Disease panel, the last two lines are:
Lyme Disease AB (IGG) WB - for me that was negative negative
Lyme Diseased AB (IGM) WB - positive negative

The Infectious Disease Dr. explained that the IGM is short-term memory, IGG is long term memory for antibodies. He'd be more worried about me having Lyme disease if I was IGG positive.

He wrote me an rx to repeat the bloodwork and told me it was my choice as to if I wanted to see him again. He said I could schedule and cancel, or call to set an appointment if I wanted to get treated in the very unlikely case that I have it after all.

Those bugger antibodies have memories! Isn't that fascinating?

Hi Jinx, you sound like a lovely, concerned girlfriend. Since your DP has already been tested and wants to give gluten-free a try, and the diagnosed son is visiting, I'd do this: Buy a new cutting board and one non-stick pan, a new dedicated toaster (you can get one for $5.00 now). Save sorting your gluten-free free foods out for later. I'd concentrate on meal plans, check the forum for breakfast, lunch and dinner items.

You could buy a few new condiments unless you've been using the kind in a squirt bottle.

If you grill, I think I got contaminated a few times because we used to grill pizzas and yeast buns on the grill, so I'd avoid that unless you wrap the food you're going to grill in aluminum foil.

Your stainless steel pots will be fine, it's just the porous plastic, wood and non-stick finished pans and cooking utensils that could CC. If you've been guilty of leaving your utensil or silverware drawer open while buttering a piece of gluten toast or bread on the kitchen counter, I'd focus on cleaning those first. I'm a little OCDC about that, because I was amazed at the amount of crumbs in my silverware drawer. Even if your BF ends up not having celiac disease, you'll feel good about a wicked clean silverware abd utensil drawer, all organized and all of that.

As far as stepping on his gluten mind, my DP always used humor and didn't make an issue about the gluten-free dinners. They're really normal meals. Meat or fish or beans, potatos or rice or squash, fruit, veggies, dessert or not. (There's a killer link for a chocolate pie in a meringue shell that is fabulous!)
