My Son's Sad Look Upon His Face

29 May 2011 - 04:32 AM

My oldest son whom, is 37 yrs old was driving by a Burger King stand yesterday. He had to stop near the stand due to traffic. The smell of the fresh burgers and french fries were pumping out into the air. He told me, he felt so sad and wanted to cry. Imagine that, a grown man wanting to cry. He was very tempted to go straight in there and get one of those burgers, he claims. He thought better of it and drove on home. He looks me in the eyes, his father with a deep saddness and, ask if this is how it is to be all his life? He just shook his head in, saddness. It made me want to cry myself and, I felt realy bad, knowing, I was the one that gave it to him from birth. He got it from me.
Which, brings me to this point, why would any person whom is not married or married without children want to bring a child into this world when, they have this disease. The only way this disease keeps on spreading in through live birth. If the current young people of today know they have this disease when they have children ? You are going to make some innocent child go through all this hell, pain, and mysery. I would not have done it had I known, I had it at the age of 18 years old.

Celiac Disease With Hypoglycemia

28 May 2011 - 08:49 AM

This morning, I was attempting to make a gluten-free cake from all gluten free ingredients. The cake mix stated gluten free all over it. It was from Betty Crocker. After, the cake was done, I started cutting it up into pieces. There were a piece or two of cake stuck to the knife blade. So, I decided to eat it and maybe just ver small piece, half teaspoon size. I went on on about the business of finishing the cake. Within 10 minutes, I started having a smothering choking spell, and, it reminded me of am asthma attack. I rinsed my month with water and, took my regular food and hoped it would not go any futher. Thank God, it was a very, very small piece of yellow cake. There was no eggs, or milk in the cake. So, what the heck happened to me? My regular diet plan never causes a reaction that way. Why woulf a simple piece of gluten free cake do that to me?

Why I Chose My Current Diet !

27 May 2011 - 01:20 PM

When, I first decided on the right diet. I did decide to try the Celiac diet. Then, I ran into problems right away.

Th celiac Diet, says to stay away from gluten, wheat, oats, and barley, etc..... That meant, I could eat just about everything esle on the plate.
Well, the spices and the natural oils in the foods gave me imediate stomach burn, heart burn, and nausea. So, I had to cut out spices.

The Celiac Diet pretty much said, I can have all sorts of sweets as long as there is no gluten in them.
I ran into problems again. The sugars both natural and refined sugars, spiked my blood glucose levels too high and too low.
I was practically having Diabetic Nightmares. My glucose levels were not stable and, this gave me physical problems.
So, I had to cut out refined sugars and watch carefully the natural fruits and other natural sugars place into my body.

So, here I was, I could not have spices, I could not have refined sugars, and, I had to watch the amount of glucose in my foods daily.
I have to stay away from greazy, oilly foods, also.

I ended up with this diet of mine:

Lunderg all natural organic brown rice
Organic, free range chicken and could only have the breast meat because it contained the less fats.
Organic Peas straight from the garden
Organic Brown lentils beans straight from the feilds
Strawberries, Blueberries, and Blackberries
2 onces of Organic Skim milk, I had to drink this because after one year of taking calcium pills of all sorts, they made me really sick.
The doctor said milk in a very small dose would help me get most of the calcium needed. Organic skim milk contains very little whey, or Casein.

Bottomline: We have to work with all the sickness or diseases in our bodies. Since, one Celiac Diet and Hypoglycemia Diet do not work too well together.

I Had The Old Test For Celiac Disease

27 May 2011 - 03:48 AM

About 7 years ago, the VA Hospital was giving out the old version of the test. Well, that is what the good old boys in Washington Board of Veterans Appeals state anyways. So, recently when, I applied for disability on it, the Borad of Veteans Appeals ask that I be given the newer tests. So, I contacted my VA Doctor again. She is the boss of her own medical clinic for my area of Denver CO. She just plain flat out refused to give me the newer tests for Celiac Disease. She said, no 1. you were given the older test which, in her opinion was not as reliabled as the newer celiac Panel test. No 2. she said, I have been gluten free for the past 7 years and, it would interfer with the current new test. No 3. The test cost too much at $900.00 a test and the US Government would not pay for it. No4. just because, my three sons have this disease does not mean, I have it anymore or ever. My ex-wives have been tested in the past and are negative. They also eat gluten products for years and no complaints on health. They are all in their late 40's and 50' year of age without any health complaints and, they eat lots of breads or other foods with gluten.

The Center For Disease Control tells me that Celiac Disease comes from the parents, mother and father of child with Celiac Disease. With that in mind, the VA Doctor still says, that is no indication or justification for me to go through the newer test again. Request for newer tests denied.

For the last three years this has been my diet. Is any part of this diet gluten in natural or is my current diet gluten-free complete. Dose the VA doctor have a point?

Organic Brown Rice with Husk on it boiled in plain water (Lundberg Rice)
Organic Chicken Breast, with no hormones, steriods, or processing chemicals
Organic Brown Lentils, boiled in plain water
Organic Peas, boiled in plain water
Strawberries, blackberries, blue berries
4 onces of Organic skim milk with each meal
I eat 6 small meals a day which works out to be every 4 hours

Would tis interfer with the newer Celiac Disease Tests ? Could the VA Doctor be right in not given out the newer test?
