In Topic: Hypoglycemia And Gluten Free Anyone?

10 April 2011 - 06:20 AM

Oh my goodness... you don't know how happy I am to find this. I've been so incredibly tired lately... I can barely get through school then come home and nap before work. I eat about five times a day as it is, with protein at every interval, but still I find myself dizzy, tired and completely worn out.
I went to the doctor the other day and she told me I am hypoglycemic. GREAT. I eat so much already, a good balance of fruits, vegetables, protein and good carbs, how am I suppose to eat more?!
It's good to see I'm not alone.

In Topic: Reese's Pieces

I am a celiac since 2006--tried reeses pieces and had immediate reaction--bloating, pain, etc. Researched it and found some indications that the carnauba wax may have been the culprit. It does not have gluten in it, but many folks with celiac sprue also react to this ingredient--avoid it.

Could you give me more information on this? I had reese's pieces about three weeks ago and got very sick but thought it was due to the fact that it was from a topping bar at Orange Leaf. I used them today in a gluten-free cookie mix and am now experiencing the same sickness—a feeling I have not had with any gluten contamination, just this. Thank you.

In Topic: Apple Crisp With Steel Cut Oats

I went ahead and tried it using the bobs redmill gluten-free steel cut oats. I upped the oven temp. to 375 degrees instead of the 350 I usually bake on. The topping was deliciously crunchy, and a little chewier than the regular one I made pre-diagnosis with the quick oats. My DH actually said he preferred it this way, and begged me to make it again (but he also loves steel cut oats). Our kids gobbled it up too :)

Could you post a recipe of this? I have those oats and it sounds good!

In Topic: 100+ Ways To Make Rice

I've made brown rice pudding with half soy milk, half coconut milk (from a can, not the weird stuff in a carton).

I grew up on Rice Burgers! Haven't made them recently, but they're good and I can dig up a recipe if anyone wants one.

Yes please! (= I don't like "normal" burgers anyway.

In Topic: Hi, Everyone... New Here, From Kansas City

Hi! I live in KC, too! Johnson County, KS. I think CFS & fibromyalgia are popular diagnoses in this area. Hope you get it figured out.

Do you know of a good support group(s) in the area?
