What Food Should I Eat On An Elimination Diet

I think i need to start an elimination diet but i don't know where to begin. I want to eat healthy while trying to figure out my problem . What can i eat for breakfeast lunch and dinner ? And how long should i do it for? I did buy some white and brown rice and chicken today along with veigies. Are bananas ok?

Question About Prepackaged Foods

Hi Everyone, Even though I have been gluten free for a little over 2 years I still dont really understand the gluten content in prepackaged foods. I recently transformed my kitchen from a shared kitchen to a 100 percent gluten-free kitchen and in doing so i have been buying more gluten-free snack foods for my husband and kids. I don't eat many snacks but if I decide to eat a cookie and the company says it tests for gluten at levels of 20 ppm what does that really mean? Is each cookie 20 ppm -or the serving size- or the box? So if I eat 3 cookies could I get sick? Hope you can help Thanks

New Symptoms Milk Problem?

Hi Everyone, Hope someone can help. I have been gluten free for a little over 2 years now and was doing great until a few months ago when I started with some reflux and some occasional slight stomach pain and bloating. These are typical celiac symptoms for me but they were not at all as severe as they were before diagnosis. My Gi thought I might be ingesting small amounts of gluten so I decided to make my kitchen 100 percent gluten free in case I was getting CC from 2 kids and hubby. I noticed some improvement after a week but now I think I am having issues with dairy. I am noticing after ingesting alot of cheese I have a terrible night of bloating gas and backache. I am 2 days dairy free now and I have improved but still feel slightly bloated and my back aches but my reflux is gone. Is it possible if I was getting CC for a few months that that is why I am having the dairy problem? How long should it take for me to feel completely back to normal after going dairy free? My insides feel kind of beat up. Is this a normal reaction to an intolerance to dairy? I never had a problem before. Thanks

How Do You Know What You Are Reaacting To

Hi Everybody, In August I will be 2 years gluten free. I was doing great but for the past 6 weeks I have had indigestion and acid reflux even if I just drink water. I had an episode like this last summer that lasted 4 weeks and then just went away. How do you know if you developed a secondary intolerance? I dont think I am getting any gluten. I did notice this morning that my vitamins now contain artificial colors -they must have changed the formula. Could this be it? Whatever I eat or drink seems to bother me so I can't pinpoint it. I had these symptoms prior to diagnosis but with severe stomach pain and bloating -luckily I don't have that now but this is getting old. Any ideas? Thanks!!

Insensitive Family Members

Hi Everyone, I have been Gluten free for almost 2 years now . My question is how do you deal with very insensitive family members? Since my diagnosis my children , husband and I have been excluded from various family dinners and occasions. I just dont get invited anymore and if I do my father will complain about the few choice restaurants that I can eat safely at so I decline the invitation anyway. When I bring up the issue and how it hurts I am told my diet just makes it too hard. The only time I have gone out with them they were all passing food to each other to try right over my plate while I was steaming. And alot of the converstion revolves around food! On a few occasions my mother has tried some of my food and has stated how horrible it is and that she would never eat it even if she had to. My father has made hurtful jokes like "oh how is your bread, cake , pie, etc ? oh yeah thats right you cant have any hahaha" I have been limiting my contact with them because of this. They just do not take this disease seriously as I have been told by my father if you are going to get very sick from celiac disease you dont do so until much later in life. Trying to bring up the issue i am told I am being too sensitive and they seem to find it funny. HELP I am a 45 year old woman with my own family -I dont want to keep fighting to be part of this anymore. Any suggestions???
