Discovering New Gluten Free Foods

03 August 2011 - 05:52 PM

Celiac is is far cry from anything to celebrate but the ~Scavenger~hunt for Gluten Free foods does have the element of thrill to it when I make a new discovery of allowed foodage. Lays stackers and all the possibilities with Gluten-Free Betty Crocker mixes [Brownies, choc chip cookies, peanut butter brownies made from cookie mix, carrot cake & pineapple upside down cakes made from yellow mix], does give me a tiny joy of sorts.
Also tried Udi`s bread toasted with orange marlalade yum, and dug around internet and found site with great recipes: better than any off-the-shelf-glute-free Flour is this "Master Mix Flour" [ 1 cup tapioca flour & 2 C. potato starch or potato flour & 6 Cups white or brown rice flour+Mix and store airtight rubbermade. Also tip for Croutons=with Cean new kitchen scissors cut Gluten free bread into tiny cubes and cover with own mix olive oil, garlic powder, onion powder,, parsley salt pepper on cookie sheet and bake low slow like you would party mix. And my fave is a gluten free Cream Soup Base [1 tsp chicken flavor boullion,2T cornstarch, 1 Cup Milk or rice/coconut/almond Milk, 2 Tb. butter, 1/2 tsp salt, blend and if want as soup add 1 cupwater, & your choice diced cooked chicken , celery, diced mushrroms, drained canned tiny shrimp, and there you have several varieties of Cream Soups for all you campbell sauce recipes over meats and casseroles. I will not Starve going Gluten Free and on the other hand I would live on green beans if that`s what it takes to get better from hideous celiac disease. Terri

Dr. Researches Possible Enzyme For Celiac

02 August 2011 - 10:36 AM

Today I ran across interesting article on celiac= A Dr. Frits Koning from the Leiden University Medical Center in The Netherlands has done research on an enzyme called "prolyl endoprotease" (PEP), which possibly could be break-through as a treatment for celiac disease. He thinks this enzyme could work in the stomach by breaking large gluten molecules into harmless fragments that`ll pass through the small intestine without teeny particles food leaking through into our bloodstream that triggers the destructive autoimmune response that happens when we celiac sufferers eat gluten. This would be an enzyme you can take by mouth. A video interview podcast is available on life lines.tv episode #20 to listen to.

Balance Issue Ataxia?

01 August 2011 - 07:08 PM

Hi, new here, it is a comfort to know not alone, initially was loosing my mind. Celiac sufferer, just diagnosed and started Gluten free, this will be easy for me as I am so desperate. Also GI Dr. did endescopy for celiac biopsy and found `stricture gastroesophogeal juncture=inflammation swelling shut of esophogus", small Hiatel Hernia.
Worse problem besides hideous initial 10 weeks suffered 30X day diarhea, is Balance, Falling feeling, starts as pressure under left rib then head, was told could be ataxia and could improve with gluten free strict diet. I could even be sitting down at desk and Bam, a jolt-falling feeling, it is so scarey to say least. Anyone else experience this and what was your personal experience, did it improve with diet? What did your Dr.`s do and say about it? thanks from panic woman, Terri
