Hi! I'm the mama of 3 sweet babies, two of which have been positively diagnosed with celiac disease through both bloodwork and duodenum biopsy. My eldest is gluten intolerant (never biopsied), and since being on a gluten free diet, has stopped having almost daily migraines. I was diagnosed when my nutritional labs came back with severe nutritional deficiencies (D, b12, folate, iron), and later confirmed with a duodenal biopsy after I had given birth. Every health issue I have ever had has tied into my inability to consume gluten, even things like mouth ulcers and asthma have completely fixed themselves since following a gluten free diet. I am opening up a dedicated gluten free, vegetarian bisto and bakery in late October in Gallatin, TN to try to offer options to the many people who must follow a gluten free diet!
