My husband has a tentative job offer in Korea. How difficult is it to be gluten free there? Any restaurants/stores anyone can recommend? We would be in the Gunsan/Kunsan AB area. Thank you for your help!

And if for no other reason than that, I'm very thankful that, of all of the auto-immune disorders I could have, I ended up with Celiac!Nothing more natural than a gluten free diet if you have Celiac. No need for medications.

But there are VERY VERY few GIs or nutritionists who do deal with this on even an almost daily bases and even fewer have much of an understanding of this disease. Why do you think it takes on average as long as it does for people to get a proper diagnosis?i rather interview actual gi specialists and nutritionists who actually deal with it on almost a daily basis. not wikipedia lol

But you say you had flattened villi shown on intestinal biopsy? Then you DO have Celiac Disease. And are you 100% sure there is no history of Celiac or other auto-immune disease? Auto-immunie diseases were not understood until relatively recently, so it could well be that there were undaignosed celiacs back there somewhere. And what about other auto-immune disorders such as auto-immune thyroiditis, Crohn's Disease, Cushing's Disease, Fibromylagia, etc.? And IMHO, the antiobitic cannot just damage your gut without a propensity to it being damaged. People go on antibiotics EVERY DAY without ending up with flattened villi. And Celiac Disease is NOT a food allergy; a food allergy is NOT going to cause flattened villi. Celiac is an auto-immune disease.im not celiac. i believe there is an underlying cause for me to be gluten intolerent. docotrs say it is hereditary. but no one has had celiacs disease in my family traced all the way back to the 1800's. so why after an antibiotic does this happen? why even on the gluten free diet does my stomach feel bloated and sick? i don't believe i have full blown celiacs i believe the antibiotic damaged my gut and it gave me food allergies until it heals.

I'll be staying with family for several days, rather than just attending one dinner. I know they will offer to cook for me. Should I just ask them to wash their dishes thoroughly before they cook anything (or rather, wash the dishes myself to be a bigger help!), or should I bring a few of my own pots and pans? I am new to the diet, but so far it seems that I am at least moderately sensitive to cross contamination. Will washing be enough? Probably not huh. I love this new diet and feeling healthy, but I'm overwhelmed with all of the questions and concerns about how to handle everything.
We'll be gone for nearly two weeks and I'll be packing enough food to pretty well cover my needs for the whole time. Will you be driving or flying? We're driving, so packing extra food is pretty easy. I'll probably start cooking in the next week or two and freezing things that I will just need to nuke and have some quick, easy meals that I know are safe.

I have redone my kitchen to avoid cross contamination. Whenever I came across a dish or spoon that I cooked with that gave me a reaction, I just threw it out. I'm now left with a clean, safe kitchen.
This will be my first holiday season gluten-free. While my family will be understanding about me having to stay away from certain foods, they obviously won't be able to make over their kitchens for me. How do you deal with this when visiting family? Do you bring along your own dishes to cook with?
The last time I ate gluten I got violently ill. I don't want this to happen at the holidays.
This will also be my first holiday season gluten free. As of now, my plan is to make up my own gluten free versions of the things that will be served (at home in my own kitchen) and just bring 'my' food along. I've already been discussing the menu with my mother-in-law and trying to figure out what I need to do to keep myself safe. Bottom line is that I don't expect anyone else to take care of me...that's my job and I'm the one who's going to do it best.

I am a bit in the same situation than you and I wonder if there is anyone here who could share about how supportive their husband/wife are? I am questionning myself right now on what I should expect from my spouse, like what would be a'normal' level of attention from him regarding this matter? Any concrete examples of support?
I guess I'm very fortunate as my husband is beyond supportive. His attitude is 'we'll do whatever it takes to get you feeling better. All I want is for you to be better.' I'm in the process of doing an elimination diet and we're working through the kitchen (he's working on eating all of the gluten-containing foods in the pantry and as he finishes those, we're switching it all over to gluten-free foods). We will eventually have a totally gluten-free house, though he may eat other things when he's away from home. He's one of my biggest advocates when we are out somewhere to make sure I stay as far away from gluten as possible.
