Try Selland's Kitchen - they have two locations now. One near Sac State, and 2nd location just opened in El Dorado Hiils. They have a small gluten free menu but what they have is fantastic! I've eaten there several times never been glutened.

Other suggestions:
The Counter - Roseville
Paul Martin's - Roseville - excellent food. They mark their regular menu with gluten free selections.

You can also google: "gluten free in sacramento" - there's a blog that that exact name that provides a pretty good list of other gluten free restaurants in the sacto area.

a1956chill - how long did it take your leaky guy to heal? I've been gluten free for about 5 1/2 months, and keep hoping for my leaky gut to healed :-)

I love many of the gluten-free snacks from Glutino - my favorite is the Yogurt Covered Pretzels! Yum. Also love their Table Crackers (like a saltine cracker). I tried Amy's Mac & Cheese recently and I had a horrible reaction - never again! Something in the artificial cheese - I usually make everything from scratch - but the one time I got lazy and ate something out of a box - and it got me good. I also like Pam's mixes - especially her corn bread one - I make a mexican casserole with it. And Pam's cookies are pretty good... but that's about all the gluten-free snacks I buy - I try to make my own or be good and eat fruit or make a smoothie.

I had something that sounds really similar... Wasn't sleeping well, and waking up with really horrible dreams and feeling upset. Turns out I have a mild case of sleep apnea. My osteopathy doctor suggested I try using the SleepRight nasal breathe aids and it works very well. If you search this site you'll see that many people who have Celiac also have sleep apnea. Try buying some of the SleepRight strips and see if that helps. Good luck!
