First off the fact that the thread was entitled Im Done bears no significance to whether it was appropriate to come on a thread with someone who feels as if they want to give up saying that they are obsessed and implying that they were sick because they were obsessive about their health.

I already know what ANA is by the way.

Obviously you typed what you meant and posted it. I doubt the keyboard took over and forced you to type the words "when ANYONE obsesses on a health issue..." You then go on to express that if I do not think about it I might feel better.
I hope you did not mean to be offensive but you ought to be more careful with the words you type because I know for certain that I am not the only one on this forum who would take offense at someone implying that their sickness is in any way in their head or that they could think or unthink themselves to no longer being ill with the things they put in their mouth.

I started this thread to express how I felt like giving up trying to avoid all the things that make me sick not because I had decided to quit making myself sick in my mind.

Wow Marc49. I find your post totally useless and disrespectful. Perhaps the fact that five days a week I spend a third of my day at work means I am a workaholic. The word obsession implies that I give unrelenting and undeserved attention to what is going on in my body. I only have one body, one life and when what is going on with my body impairs my ability to suffer this life, then it is 100% deserved attention. When what is going on in my body makes it impossible to provide myself safely with mmy most basic neccessity to survive (nutrients), it is gonna get my attention.

And not that it is truly a point worth discussing but I will humor you: there were plenty of times I decided that I would just pretend like nothing was wrong and it just resulted in a lot of pain and suffering and a cascade of torturous symptoms that sapped my ability to function or even breathe or remmemmber what day it was or spend time with my family. Maybe you're right, if I quit dwelling on it and instead decide to starve myself rather thhan think about how to feed myself I will feel better for a day or two.

The best we can do is when we have one pop up where we live, we support it as much as possible and eat out just because we can. That is the best part though, being able to eat out nonchalantly without fear. Some degree of normalcy.

I have been a little absent from the forum for a while but I thought I would let people know what has been going on. Maybe this will encourage someone. I was getting desperate there for a while. I lost so much weight that my family members started saying I looked frail. I could not eat any foods in the moderate salicylate content category. I was extremely dairy intolerant. I couldnt drink out of plastics or eat anything moist that had been in many plastics without my throat swelling and losing my voice. Nevertheless I hung in there and ate that bland diet and started forcing myself to drink plenty of water out of a stainless steel container bought that does not contain a plastic lining. Drinking two liters of filtered water a day I found that my salicylate and acid sensitivites were going away. I can now eat many spices and I tolerate it well. I am not as sensitive to plastics as I was and can even use regular toothpaste instead of baking soda now.

Not everything is perfect though. I find that if I go too much on the side of carbs and sugars I still bloat up. I do not eat red meat that often. Honestly I do not miss it as it is much harder to digest and I have become accustomed to not having a heavy abdomen anymore. I still do not tolerate corn syrup at all and my body does tolerates only occasional and small amounts of corn starch before my lips and tongue go numb and start burning. Corn Syrup gives me extreme brain fog still and I even stutter if I get fructose comatosed by something I ate because they changed the ingredients and put high fructose corn syrup in it. I am still considering getting a test done for potential candida as I have noticed that I seem to thrive on a mostly low carb diet with lean meats and veggies.

All in all, I cannot complain. I feel very blessed that the biggest diet restriction is behind me now and it did not take a year for that to happen. Hello flavor! It is good to be able to love food again.

The thing that sticks out, to me, with your example is that "you would know of your neighbor's peanut allergy"...how can companies "know" about the individual needs of their consumers?

Exactly! :) That is precisely the point in full disclosure. That is why they should list everything on the label or otherwise make the ingredients, processing method and so on attainable in some way.

Even in many schools there are rules about using scented lotions or distributing foods. It is to protect against people having allergic reactions.

In high school, some of these things were banned and others were allowed but with requirement to tell that the fundraising candybar has nuts and so on.

And of course it is worth mentioning that companies Do know that there are people who are allergic to wheat or have celiac or nut allergies and such.

Good news is I made some homemade mustard.
Bad news is all they had were a few yellow mustard seeds and a bunch of black

Good news is I was able to make enough to last me 4 yrs.
Bad news is it is very pungent.

Good news is tastes okay with honey.
Bad news is the honey won't get the yellow stains off the counter top :o

Good news is I learned baking soda is how to make it light and creamy
Bad news is the baking soda couldn't cover up too much vinegar.

Good news is cooking the jars in a big pot did just fine to seal
Good news is that I know to never use black seed again

And there you are more good news than bad news so I win!

A friend of mine posted the link to this on their facebook page. I went to read the article and it didn't seem to make sense that because this wheat is really old, it would be able to be eaten by people with celiac disease. However, since you are the smart people who know more about all this than I do. I figured I would post this here and get an educated opinion.

The other thing that bothered me about this article is that the person who is writing it doesn't seem to know what they are talking about in regards to Celiac itself. At one point they say "gluten sensitive celiacs" as if there is some other type of Celiac Disease. Okay, end of rant about stupid comments in articles.

Oh yeah I remember reading something about that. I guess it stems from the idea that the unnaturally genetically engineered gluten of todays wheat is far from what it used to be and the apparent correlation in the increase in sensitivities. I personally wouldnt think it would fix the problem for celiacs. Once the body decides gluten is an invader and develops a damaging response, I cant imagine making a more natural grain again would make a difference. Maybe it could decrease the risk for the greater population developing a similar reaction if the body doesnt come to recognize it as harmful in the first place. I am new to this issue but it didnt excite me very much when I read about it.

1. No, I am NOT making this up.

2. Yes, as a matter of fact, it DOES hurt.

3. If just the smell of peanuts can kill someone with a peanut allergy, why do you insist that a couple of gluten crumbs won't hurt me, a Celiac?

3. No, Celiac is not something one gets over eventually.

4. Yes, when it comes down to hurting your feelings because I can't eat your food, or being sick for weeks, your feelings are going to lose every time.

5. Have you been to Celiac.com? I think you need to go there and read because it sure sounds to ME like you too have Celiac.

I like the peanut one its a good point. Number four is perfectly straightforward

I think every celiac should carry, not just an emergency medical card, but a card called a "UDUMB" card. This stands for "U Dont Understand My Body" card. This card should have answers to frequently asked questions and comments that people make. It will make life simpler for every celiac and gluten intolerant. These cards should be highly customizable.

I think with all the times people ask me whats wrong with me and why I am not involved in activities like I once was or why I act like everyone' s food is poison, Mine would read:

1. You dont need a doctor to tell you chili gives you heartburn so why do I need a doctor to tell me gluten makes me ill?
2. I am not fat I just have a wheat belly.
3. I am not picky; it is just my immune system that is.
4. If celiac were contagious, one in every 130 americans would be in quarantine.
5. No there is not a beano pill for gluten.

What would yours say?

I like corn and rice pasta. My mom bought it at walmart finally supporting me and its the best gluten-free pasta I ever had. Follow the directions for amount of time to boil and the trick is to cook in some sugar (i use stevia). Its so good. Pasta is the best, in my opinion when it is baked for a little bit with the sauce on it after thorougly draining excess water

Yeah I think that is a field of cow pies. There is absolutely nothing unhealthy about not eating wheat. Just because bread is fortified with vitamins doesnt mean we have to have it. I mean how did we survive before? Its not a necessity at all. Notice in this day and age there are a gazillion different supplements someone can take even if they dont get nutrients naturally from an alternative source. Fortified bread isnt naturally nutrient rich anyway. I eat a lot healthier gluten free than i ever did before. I eat a lot of fresh vegetables and fruits and experiment with a wider variety of foods because of this "fad".

I think gluten is just a frankenstine of a protein and just about any food and drink made in a petri dish or brewed in some lab somewhere! When will americans learn that real food is better? Maybe we need to learn to eat our vitamins in natural foods instead of eating fake food all the time and adding vits. to it. What kind of sense is that? If however we, as a wjole,choose to continue to eat this way we can still "fortify" anything else other than wheat products.

You know this is totally random but this reminds me of how furniture stores do. They will buy something at a certain price and mark it up rediculously high just so they can mark it down a little and make you think youre getting a better deal. Its kinda the same thing; they suck all the nutritiative value from our foods and add a little and people actually think they are eating healthier buying synthetic foods and drinks when they have a few vitamins listed.
