Dove Dark Chocolate Question

26 February 2013 - 06:40 PM

Does anyone know if Dove silkly smooth dark chocolate candy bars are safe for me to eat? I am concerned about it being contaminated by being made on lines which also handle barley.

I am interested in trying this candy because the label says it contains sugar unlike the other chocolate I see that have some type of corn sugar or corn syrup in them because I can't have corn. It doesn't say it was produced on any equipment that also processes wheat and ingredients are: semisweet chocolate (sugar, chocolate processed with alkali, cocoa butter, milkfat, soy lecithin, natural and artificial flavors).

Cookie Dough Help Needed

26 February 2013 - 06:18 PM

I haven't yet attempted making cookies but I want to start. I have to make my own dough as I can't have any mixes I saw that don't have xantham gum in them. I use guar gum. And I can't have corn or soy in addition to wheat.

I am looking for a dough that I can shape into a small ball and then press with a cookie stamp and make a design on the top. Is this possible to do with glutenfree dough...I know it behaves quite differently from wheat dough and I am worried about it taking the imprinted design on it. Any comments or dough recipes from you cookie bakers who make you own glutenfree cookie dough will be appreciated.

Bloodwork Question

20 February 2013 - 07:20 PM

Can you tell me the name of the basic bloodwork test to determine if someone might have celiac disease. Is it called a Celiac Panel?

I am concerned my younger brother may have celiac disease and so I want to tell him the name of the bloodtest to ask the doctor to do. He is not really having too many problems at this time but I do not want him to eventually go through all the suffering it has caused me. It is my understanding it is hereditary and runs in families. He is lactose intolerant and as a child had quite a few stomach complaints and also seemed to have failure to strive...he did not grow a bit for 8 straight years. He is always taking things now for what he says is indigestion and says it is just because he drinks beer often. He also says he eats a lot of bread. And he has been having a red lumpy rash on his face which does not respond to things the doctor orders for it...mine was on both elbows and I had it for over 20 years and it never responded to anything the doctors ordered and 4 months after I stopped eating wheat it completely disappeared and has never come back.

Do you think I am being overly cautious in wanting him to be tested for celiac disease? Sorry for the wordy post but I would like your opinion as I know I have always been a bit too overprotective of my younger brothers.

Corn Allergy -- Question Re Xanthan Gum And Namaste

19 August 2012 - 07:19 PM

I have been reading online that Authentic Foods makes an xanthan gum that is cornfree but couldn't find verification on their website.
And read also that Namaste makes products that contain cornfree xanthan gum and I did find verification of that on their website.

Have any of you with corn allergies or sensitivities used either of these products without any problems? At present I keep substituting guar gum in anything I make because in the past any store bought product containing xanthan gum or any mix with xanthan gum caused me stomach upset or some pain in there shortly afterward.
