Gluten Free Pizza

27 February 2013 - 01:23 PM

I have a [school] club event tonight, and we're having pizza, but I'm gluten free, so I can't eat it, so I was just planning on bringing my own so I won't feel completely left out, or super tempted to eat the pizza.

Frozen pizza is obviously the easiest, so I was thinking about maybe getting that. I tried the Glutino brand crusts once, and they're really nasty...are the premade pizzas any better? Or other brands that are good?

Doing A gluten-free Trial

15 February 2013 - 07:22 PM

I went to the doctor today, and she said based on my symptoms (GI, headaches, fatigue and rash which she looked at), she is fairly certain that I am gluten intolerant and pretty much sees testing as something unnecessary [for me] based on what I told her and what she saw and that the true test anyway is going gluten-free for awhile and seeing if it clears things up.

So now I have to buy a whole bunch of new food since most everything I have is laden with gluten...I have tons of pasta and bread and crackers etc. Fortunately, I love cooking, and I love fruits and vegetables, so I'm going to try to eat mostly fresh foods that I cook myself rather than switch over completely to gluten-free substitutes (although I will have to find a pasta...that's one of my favorite foods)! Any suggestions for that? I can live without bread. I actually don't eat it much anyway. I just keep it around in case I'm in a bind and need something to eat that I can make quickly and take with me.

This is going to be a very big change for me, and hopefully it works out okay. I'll probably now use more of my food budget from my parents (I'm a college student living in an apartment with no meal plan) since gluten-free foods are much more expensive than regular ones.

Wish me luck!

New -- Have Symptoms Of Gluten Intolerance

08 February 2013 - 12:56 PM

I've noticed, for a long while now (about 2 years), that whenever I eat things with any real amount of gluten, I feel terrible not long after.

My symptoms include:

- Headache
- Fatigue
- Stomachache/nausea
- Bloating
- Gas/burping
- Vit D deficiency (found out from a blood test)

I know that these are typical symptoms of gluten intolerance/celiac, so my question is: Should I go to the doctor, or should I jut try to cut gluten out and see what happens?

A few years ago, I did talk to a doctor about it, and was told to try going gluten-free for a week or two to see if it helped. I only lasted a few days though since I was living at home, and my parents pretty much refused to buy/cook me gluten-free food. Now however, most of the year, I live at school, in an apartment, and I buy and cook my own food, so going gluten-free is a much more viable option.
