Oatmeal Muffins

I found this recipe in a regular cookbook. Pretty simple and tasty if you eat oats.
2 c. Quick cooking oats.
1/3 c. Brown sugar
1 1/2 t. Baking powder
1/2 t. Salt
1 c. Milk
2 eggs ( I used 1/2 c. Applesauce)
2 T. Oil
1 t. Vanilla

Mix dry ingredients. Mix wet ones and add to dry. Blend well and let set 5 minutes. Grease muffin pan and pour mix into pan. Bake at 350 for 15-20 minutes. Serve these topped with syrup.

Pancreatitis And Gallbladder Removed

Went to ER with elevated lipase level.  They removed my gallbladder although no stones but had sludge.  Was doing well at home for a week but now have burning and mild pain where gallbladder was at times.  Very concerned about pancreatitis relapse.  Can this be related to celiac?  How long do I live off of a low fat diet? Anyone have any suggestions so I can eat? No, I don't drink alcohol.

 

 


Eczema?

I have been gluten free for several years and I have a rash on the back of my ear since I was a little girl. I have been to various doctors and only received steroid creams which I have used off and on throughout the years for flares. 6 months after going gluten free my facial glands swelled and I couldn't get my rash under control. I went to a dermatologist who biopsied it and also found staph. The only diagnosis I received was eczema. Dermatologist said it could be caused by stress since I claw it during the night or itch it when nervous. Interesting though, that during my 2 pregnancies, I never had a flare.

Since then I wonder if it could be celiac related and didn't show up since I was off of gluten. It does not explain why I keep having problems now unless I need to be more careful with hair spray and shampoo.

Any thoughts?

Genetics Testing Again

After 3 years of being gluten-free, I convinced my new gastro do re-do the inconclusive genetics test. I have other issues such as possible Sjogrens and is seeing a rheumy for that. My insurance will not cover it but I would like to know, especially for my kids. I have less stomach pain but still am constipated to the point that I use Miralax daily. I have gained my weight back and am less fatigued but not sure if that is due to taking
Plaquenil or gluten-free diet.

Now I feel that maybe it is not worth it. If it is negative then I don't have it? Any thoughts? I am checking with my insurance before proceeding.

Trying But Feel Like Giving Up

I have been gluten free for 2 years, dairy, egg and peanut free for a year and just got an upper GI recently and damage still looks bad.  In fact, I don't have a celiac diagnosis but did test high for several gluten antibodies. 

I also am taking plaquenil for an unidentified autoimmune disease like lupus and am constipated without taking miralax.

 

I guess I am looking for answers of why my system does not look and function better after 2 years.  I am living with gluten eaters and wonder if cross contamination is the reason.  I am to the point that I question everything I eat these days and really don't think it is a healthy thought process.  I also wonder if my constipation would be better without grains.  I can't even think about taking anything else out of my diet, it just seems difficult.  Thyroid has been checked and is normal.   

 

Any suggestions are appreciated.
