Yup, although I credit vegetarianism for actually helping me diagnose Celiac disease. Back when I was fat and happy I didn't give diet much of a thought. Then when I went vegetarian/vegan for a slight period of time - all the increased wheat products really kicked my behind. That's when I decided to go to the doctor and receive the dreaded diagnosis. 

 

I had to add meat back in because meals were already too limited and boring without the meat. I still feel slightly guilty about it... but we have to do what we have to do to survive. Even though I know I could get by with out... my character is too weak. :)

I went to Logan's Steakhouse with family last weekend. I didn't eat anything (of course) but I still like to go out. The waitress asked me why I wasn't eating. I told her I have Celiac and I was worried about contamination. She laughed at me and said. "I'm a bio major. I know that gluten isn't a contaminant." This is why I don't eat at many restaurants.

When was the last time you were tested for deficiencies? What does your result panel look like? 

 

I would cut out that junk. At least for a few more months and then slowly introduce it as you know you can tolerate it. I know it sucks and you probably want to get back to a normal life as soon as possible but it's hard to say what could be causing you problems in all that junk. If you feel better off of it then it should probably go for now. I take a strong multi-vitamin with iron (pre-natal) but I wouldn't go taking anything unless you have a valid reason. Do you have a doc you see regularly? He can check your levels and tell you what you need or what you're missing. 

 

I hope you feel better and I know CC and glutenings suck.

Just curious: Is it normal to wake up feeling pretty good and then just deteriorate throughout the day? I'm trying to pin down if this is a normal progression of the illness, a symptom with my acid reflux or if I am glutening myself somehow. I do not believe it is the latter as I am pretty strict on cross contamination and the like.

 

Although I may have an issue with nuts. I'm going to cut nuts out for a little while

 

I usually wake up feeling okay. I take my lanoprazole for acid reflux and go through the day. But sometimes around 5 or 6 in the evening I will get extremely tired and fatigued, semi-nauseous, heart rate will go up and gassy/bloaty. Anyone else experience this or just want to share how they are coping?

So, I have been browsing around elimination diets and I really think I need structure. Such as: add ingredient 1 after so many days and document how you feel. 

 

But I have been browsing all these different elimination diets and they are vary. Does anyone have a good resource for celiac elimination diets?
