I am so grateful to figure out what was wrong! I'm getting better and better and learning so much about my body, and about food/nutrition.
I am managing my symptoms on a dairy free (besides butter), low histamine version of the Specific Carbohydrate Diet. My diet is extremely limited right now, but I am hoping that, eventually, I can have a "cheat day" once a week and reintroduce gluten free grains and other SCD "illegal" foods (like potatoes) slowly.
My most difficult challenge has been my candida overgrowth. I feel if I can beat that, I can beat anything! Eating gluten free is very simple compared to eating on the SCD diet. I am learning to cook, and I love finding new ways to eat healthy.
I was one of the people that gained A LOT of weight before I was diagnosed. I am now (about 1.5 years later) 1 pant size away from being the size I was before everything started accumulating. I can do this, we all can do this. Hang in there!
