True story (not one word of exaggeration):

Before going gluten-free, I was known as the queen of lists. I made lists of things I needed to remember and carried these lists and consulted them all the time. If something wasn't written down on one of my lists, then it got forgotten.

After going completely gluten-free, my memory improved so much that now, one of my many nick-names is 'elephant brain.' Honestly. I've got a super-sharp memory. Unless I get glutened, in which case it feels like my brain is filled with cotton, and I can't remember my own phone number. It takes a good 3-4 days for the brain fog to lift after a glutening. Then I go right back to elephant brain.

Check the gloves and see if they are powder-free, or at least if they are using ones powdered with cornstarch.

Also, ask if the dentist or hygenist wouldn't mind washing their hands thoroughly before putting on the gloves (if they've just eaten some gluteny potato chips or just a bite of a muffin or took a sip from their paper cup of coffee covered in muffin crumbs, then the gluten can transfer onto the gloves).

And get them to put on a new mask. Often they pull the mask on and off, and go out to grab xrays or files from the secretary or grab the telephone handset...and then put the mask back on with their hands that may have come into contact with gluten.

Works for me!

There's an easy way to deal with this that doesn't offend anyone and yet keeps everyone informed about what's going on.

As soon as someone gives you something containing gluten, just say: Oh, I can't eat/use these because they contain gluten and I can't eat gluten, but thank you for thinking of me. I will make sure these go to someone who LOVES these things!

And then put the package away.

Just wanted to add my 2 cents:

there's a big difference between OCD and being very disciplined. I consider myself extremely disciplined with my food and my environment. And this discipline is a source of pride, not shame.

Sometimes my limited diet makes me a little bit crazy. And sometimes it makes me really crazy. I'm usually okay with this life of eating like a tree squirrel. But sometimes it gets to me, and today was one of those days. A perfect summer day. Lots of folks coming back to the city after their holidays. Everyone out in their white pants and yellow shirts to show off golden tans. And everyone eating ice cream cones, slices of pizza, french fries with ketchup, drinking frothy cappuccinos, eating tall pieces of chocolate torte, or lazily stirring a cocktail. They all look so free, and easy-going.

Nobody is having a conniption fit because someone touched their ice-cream with the scoop that touched the cone (and thus got gluten all over everything). Nobody is sitting there licking strawberry sauce off their fingers and wondering if the strawberries were grown locally and organically as promised or if they were actually trucked in from unknown parts, sprayed with all sorts of anti-fungals and antibacterials and rodentcides and pesticides to make them look fresh and thus making a trip to the ER a real possibility sometime in the night. No one gets alarmed when the guy making the espresso is also eating a sandwich. No one slurps froth from their powdered-mix-made cappuccino while nervously reading the teeny-weeny-font of the ingredient list from the packaging to scan for additives, colorings, and preservatives that will require some sort of antihistamine concoction to prevent hives within 15 minutes.

Summertime and I think Christmastime are the times when my food restrictions cause me a wee bit of grief. Convenient food is such a huge part of these times of the year, that it really can make a person who is unable to eat those foods really feel like they are not a part of it all. Like I'm on the outside looking in.

I know this feeling is silly because there are so many other problems out there so much bigger than this. But I'm just being honest. I know global warming and economic crises and wars and injustices and all sorts of bad stuff is going on. But today, I got to feeling sorry for myself because I couldn't have a regular ice-cream cone from the regular ice-cream place with all the regular people.

I feel somewhat better just getting that off my chest. I'm usually a really cool-headed person, and chipper and bright and grateful for everything I have. But an ice-cream cone got the better of me today :wacko:

Thermos! Thermos! Thermos! I have several in various sizes (tall, thin, wide, short, big, little) and I take one or two along whenever I go to a dinner or someone's house. I fill it with whatever I feel like eating: sometimes it has hot soup, or hot stew or hot risotto, chili, creamy polenta and sauce, gluten-free noodles and sauce, etc. Everything will stay hot and delicious for around 8 hours. I will also bring a smaller thermos that has my own hot coffee or hot tea in it. I always explain ahead of time to people that I'm bringing my own food.

If I want to eat something cold, then I bring my lunch-sized thermos bag that will keep things cold for a good 4-6 hours. In there I'll stash cold drinks, or cold chicken salad/tuna salad/gluten-free noodle salads, veggies and dip, etc.

I always carry a knapsack with me that is always stuffed with things I might need including: fresh washed fruit, nuts, safe popcorn, etc. Plus I always carry my own little stash of cutlery, small plastic plates, safe packets of salt/pepper/condiments/sugar, a bottle of water. If I need any of these things, I just get them out. If I don't need these things, I leave them in the bag and use them at a later date. The point is that I'm always prepared. The first 2 or 3 times people see you drag out your knapsack, they'll comment on the strangeness of it. But by the 4th or 5th time, they won't even blink an eye. Seriously.

I bought my own countertop grain milling machine and now I make my own polenta, rice flour, bean flours, etc. For polenta I just put popcorn kernels through the machine and grind it at a course setting (I actually like to use Orville Redenbacher popcorn...but any popcorn will do). I don't live in the US...so I am not sure where you can buy these things. I looked them up on the internet and found this link to a place that has pictures and descriptions of different kinds of mills. They are a bit pricey...but so worth it. I have one that looks just like the Wolfgang model. And as for making polenta: grind the popcorn kernels. Then add to boiling water (about 1 cup ground corn for 2 cups water). Turn down the heat to a simmer and stir, stir, stir for about 20 minutes. Add a pinch of salt and some olive oil. If you can have dairy, try with butter and cheese, or add some cream to the final stirring. You can also do the same with rice flour. Yum!


I'm looking for polenta? Does anyone use it and what brand? I don't care for the stuff in the tube. The only ground corn product I've found that doesn't make me feel a little funky is Maseca but it's more of a corn flour and not course enough for polenta.

Can you eat beans? Try this yummy dip rolled up in lettuce leaves or eaten right out of the bowl with a spoon:

1 can organic prepared beans (ingredients: beans, salt, water)
1/2 avocado (optional)
1/2 teaspoon dried oregano
few shakes dried thyme
few shakes dried sage
about 5 tablespoons extra virgin olive oil
optional: about 5 tablespoons gluten free vinegar (balsamic or regular)

Throw it all into the blender or chopper and chop until the consistency of peanut butter (smoothy or crunchy)

That's it. Enjoy. You can leave out the avocado if you don't like them. You can also add about a tablespoon of chopped onion if you like.

If you are really adventerous....add about 7 roasted almonds to the mix.
