Planning A Celiac Seminar

As a few of you may know we own a hardware store but because of my celiac we also sell gluten free foods. Recently I have had several newly dianosed customers who come in for food but also just to have someone who understands to talk to. I have been toying with the idea of hosting a three hour -seminar, symposium, meeting??- so we can meet together and talk as a group. I always tell my customers that I can only tell them things from a personal standpoint because I am not a medical professional but that is what they want to talk about. If I were to do this I need some ideas on what to do?? I had thought about contacting the local hospital's dietician, some local resturaunt managers, and maybe the school lunch supervisor to sit in on this so they can get a better understanding of the diease and see how important this knowledge is for them to serve those who suffer from celiac. I had also thought of serving a totally gluten-free meal so those who are new to cooking can see that it can be done. Other than that I need to know what else to do. I have a location but have not set a time, probably later this year, so it isn't something I am going to rush into. Please think about it and if you have any advice I would love to hear from you. Thanks in advance.

Is Fondant Gluten Free

My youngest daughter got engaged over the holidays and is planning her wedding. The woman making her cakes is going to make one gluten free for me but is concerned about the fondant. Is it safe for me??

Surgery Update

I had my partial thyroidectomy Oct 14th. Recovery has been slow, extreme fatigue. I just talked to the surgeon's office after waiting since Friday for them to call. I had what they called a papillary micro carcinoma in one of the nodules that was in the side they removed. I am going to see my regular doctor on Thursday to go over all the reports and labs the surgeon has sent him to answer all my questions. I appreciate the prayers and thoughts that were sent my way.

Biopsy Results Back

I had my fine needle biopsy of my thyroid last Friday. The doctor called today and said that the biopsy showed cancer cells were present. He wants to see me Monday to schedule surgery to remove my thyroid. He said he thinks it is a non agressive type but taking it out will be the best way to find out. Thanks for all the prayers and thoughts and if you don't mind sending up a few more they would be greatly appreciated. I will keep you updated.

Starting To Get Anxious

I have my fine needle biopsy on my thyroid Friday and I am starting to get a little nervous, anxious, whatever. I am not nervous about what is wrong as much as the fact I HATE needles. I would appreciate any thoughts or prayers on Friday. This group always come through and I know I can count on you. Thanks in advance.
