This product will improve the rise, texture, and shelf life of whole grain breads. Natural ingredients include,lecithin, ascorbic acid and ginger. Lecithin improves aeration, improves tenderness, and provides resistance to staling.
Ascorbic acid and ginger acts as yeast activators allowing a maximum yeast yield.

Use ¼ teaspoon per cup of flour.

Ingredients: Lecithin, Ascorbic Acid, tapioca, ginger.

Shelf life: approx 18 months. Keep jar closed away from heat, light, moisture.

I guess we need to learn how to use this product, based on all the comments from everyone. My bread is still awfully heavy and dries out after a day. I almost choke on it and I am using the 4 flour mix from here too. I am getting very frustrated with not having a decent bread anymore. But I will follow the recommendations I found here and we will see.

I was devistated when I found out that 2 of my family members had a gluten allergy, because I make baked goods from scratch all the time, and they love my baking; I thought the days of baking were over. However, with this dough enhancer my baked goods turn out just like my original recipes, light and flakey!!

This is really good. It made my bread fluffier and less crumbly and the taste of the bread wasn't changed.

I started making Gluten Free bread with this dough enhancer instead of vinegar. I think it works much better as the texture of the bread stays fresher longer instead of getting crumbling after a few days. I won't use anything else now
