I purchased this flour as everyone had raved about it, but I must say I wasn't impressed. I tried making a pie crust with it - the crust turned out tough. I also tried Snickerdoodles, those were also a disaster. I've had much better results with other flours.

I used this in two different applications - as a breading on chicken (where nobody noticed and the food was raved about) and in biscuits (where it was pointed out that I did something different, but they were all eaten so, must have been okay). I did notice a slight flavor difference. It is not a bad taste, just different. We will order again, and I agree with storing it in the fridge.

I simply LOVE this product. I recommend it to everyone. Even my non gluten free friends! It is absolutely wonderful! As other reviewers mentioned I also recommend storing this product in the refrigerator unless you plan on use it up quickly!

Love it! Recommending it to all my GF friends and family. Use cup for cup with all of your old cookie recipes. You won't taste the difference. The only difference I've found is freshness. Store this mix in the refrigerator. Also, cookies only taste fresh for 24-36 hrs so, I recommend smaller batches.

LOVE this stuff!! I grew up baking with wheat flour and was disappointed to not bake "my usual stuff" with the other gluten free mixes. This, however, you can substitute cup for cup in those traditional recipes, with little if any change in taste or texture. Everyone that I bake for has no idea they are eating GF.

I do a lot of baking and when I found out I was celiac, I tried every flour blend, store bought or my own mixes, to bake breads and cakes; so far, this flour is the winner by a long shot! I made carrot cakes over the holiday's for family and friends and the gluten free version was better than the original recipe! Friends who ate the gluten-free version unbeknown to them loved it! Best of all with this flour, no "bean" aftertaste in your baked goods! Truly the best.

I used this amazing flour several times this week to make crepes, deep fried onion rings, deep fried chicken balls and roll kuchen (a German fried flat like doughnut). All tasty gluten free and were equally delicious! I am buying more!!

All of these flours can get very confusing! I read the reviews and decided on this one and have had success with it so far. I made banana bread yesterday and everyone (all gluten tolerant) loved it. I used a straight cup for cup substitution and it baked up nicely. There is no strange taste and no grittiness. Two thumbs up!

I use this flour just like "real flour". My husband who doesn't have to eat gluten free products says items I make with this flour taste better than items with "real flour".
I only use this flour mix.

I never write reviews, but I have to for this flour. I was tired of mixing flours, and trying gluten-free recipes that came out with a terrrible consistency. I use this flour for everything I use regular flour for. I was so exited to taste muffins and cookies that tasted normal. Finally, celiac disease is not so bad.

My holiday baking experience was awesome due to this flour! I have a family sugar cookie recipe we bake each Christmas. Our family tradition is for the kids to frost and decorate the baked cookies.
This is the FIRST year I was able to use the same recipe, but using this flour. (cup for cup)
No difference! My daughter was able to join in the frosting tradition with her own batch of cookies and enjoy eating the frosted sugar cookies she has missed eating the last few years. (guilt)
HELP!!
The ONLY problem I can't solve is this flour does not give me the same great results when baking cakes from family & cookbook recipes...even after adding the Xanthum Gum as recommended.
The cakes come out flat & dense EVERY time...and do not bake evenly. The outside is "crispy" while the middle is still in need of time in the oven.
We end up tossing the cakes...any suggestions for helping the cakes to rise & have the same texture as "regular cakes"

I have to say that we were very excited when I made a chocolate, gluten free, casein free , egg free , nut free cake with this flour. It was delicious. It even baked evenly and smooth. This came out better than the original recipe. We also like to breaded boneless chicken breast with this flour and salt and pepper. We fry it up in oil and it is so good. this flour is worth the buy.

This flour is awesome! I have used it to bake Toll House Cookies (used the recipe straight from the Toll House Chocolate Chip Bag) and I have breaded chicken to make Chicken Marsala...I used to make a separate batch of cookies or make the same dinner, but two different ways because of my daughter's celiac...but now I use this flour and the entire family eats the same cookies & dinners prepared the SAME! Finally!

I have never felt compelled to write an online review on anything before, but this I just had to share. I have been Gluten free for a year, and most Gluten free stuff is gross. I still haven't gotten used the the texture and taste change with Gluten-Free products. I can taste if something is Gluten- Free usually in the first bite. I have tried several types of flour in cookies and cakes, but they all had the same pasty "gluten free" aftertaste.
This has the texture of wheat flour, and does not have the nasty aftertaste I have come to expect from non-wheat flour. In sugar and oatmeal cookies the change is nearly undetectable. I also have had a sour cream pound cake that was pretty good too. I don't think anyone would be disappointed with this flour.

Wonderful Flour!!
I was so glad to read the previous reviews and ordered this for home. We were able to make chocolate chip cookies right off the recipe on the back of the chips package and they tasted exactly like ones made with regular wheat flour. Great find!!!

This is really the only flour you need if you're interested in substituting gluten-free flour in your regular recipes. One of the reasons it's so good is that it's made with rice flour that is ground very fine, so it won't give baked goods that grainy texture that you sometimes get with other gluten-free flours/mixes. I have found that you may need just a bit less of this flour than you need of regular wheat flour in most recipes - doing an exact 1:1 substitution can sometimes result in a product that is less moist than you're used to. I generally add about 3/4 of the wheat flour amount and then keep adding bit by bit until the consistency of the dough/batter looks right. Anyway, since discovering this flour blend, the only other flours I really need to buy are ones like sorghum, buckwheat, teff, etc. for adding some "whole grain" taste when desired. You can't go wrong with this product!

I LOVE this flour. It is EXACTLY like regular flour, you don't have to add anything to it at all. I've used it to make everything from fried chicken to banana bread and it doesn't disappoint. Definitely pick up this flour if you are looking for something to substitute for regular flour in recipes.

This flour is great. I used it for this thankgiving to make a cake, cornbread, cornbread stuffing, and waffles. I used my recipes and they tasted the same as if I used unbleached flour. This will be the only flour I will use in the future to make all of my baked products. November 24, 2006.
Thanks Authentic Foods.

This stuff is great! I can't believe how well it works with my old family recipes. My waffle recipe is one passed down for generations; last night I made it using this flour in place of the wheat flour, substituted soy milk for the cow's milk and they came out perfect without any variation in flavor or consistency. Other flours I've tried caused waffles to be crisper than wheat flour, or a change in flavor. I've also used this to make cornbread without any changes in taste/consistency, as well as my family Dutch pancake (4 eggs, 1/2 c. milk/soy milk, and 1/2 c. flour; bake in rectangular pan 25 min. starting at 400 deg. and reduce to 350 deg. by end.) Other flours caused more of a souffle dish with the flour creating a separation/crust. Consistency with this flour was as it should be - a light eggy thick pancake with nothing marring the flavor. This is the best all-purpose flour I've found to date and I'm VERY impressed and happy!
