To make Banana Bread or Muffins:
1/2 cup unsalted butter or margarine, softened, 3 medium overripe bananas, 2 large eggs (for egg free version, replace 2 eggs with 3 Tbsp water, 3 Tbsp oil and 2 tsp baking powder, mixed
together)

1. Preheat oven to 350 deg F.
2. Spray muffin tins or loaf pan with non-stick spray.
3. Pour mix, butter or margarine, bananas and eggs into bowl of mixer with paddle attachment.Mix until fully incorporated
4. Scoop batter into muffin tins or loaf pan and spread evenly. If using muffin tins, fill any empty parts of muffin tin with water to promote even baking.
5. Bake loaf for 50-60 minutes or muffins for 20 minutes, or until toothpick inserted in center comes out clean. Baking times vary with different appliances.
6. Cool in pan for 5 minutes. Invert onto rack. Cool and serve.

Makes 1 loaf or 15 large muffins.

I tried the blueberry (no egg) recipe on the box and they were scrumptious according to my guest. I could not tell the difference between these and my usual blueberry (non-gluten) recipe when I tried them.

I used this mix to make pumpkin cranberry muffins and wow! They were a big hit!!! The taste was incredible...couldn't even tell they were gluten-free! They rose nicely in the oven and kept in a ziplock bag for a few days afterwards. We enjoyed them for a quick breakfast when rushing off to work in the mornings. I will be purchasing this again! Next time I am going to try the banana bread recipe (various muffin/bread recipes included on and inside the box)!

My daughter loves these. I do too. Moist, flavorful. We made some substitutions and they came out great! We used 1/4 cup applesauce and 1/4 cup safflower oil. Not so greasy as 1/2 oil. Also used rice milk instead of regular milk.

I love all of the 1-2-3 mixes that I have tried. This one is no exception. The muffins have a nice taste and texture and hold up well to the assorted added ingredients I have tried thus far (blueberries, chocolate chips, etc...) My son is a very selective eater, so I cannot just offer him any old muffin!
