To make Cake or Cupcakes:
1 package Yummy Yellow Cake Mix, 1 cup unsalted butter, softened or shortening, 2 cups sugar (to substitute agave for sugar, use 1 1/2 cups agave and reduce milk to 4 Tbsp. Cakes will bake in approx half the time), 6 large eggs, room temperature (an egg free recipe using ground flaxseed is available on their website).

1. Preheat oven to 350 deg F. Generously grease 9"x13" rectangular cake pan or 2-9" round pans or line cupcake pans with 24 cupcake wrappers.
2. Place butter and sugar in bowl of mixer with paddle attachment. Beat well until light and fluffy. Add eggs and beat well.
3. Add cake mix and milk (or substitute) to bowl. Mix until smooth. Scrape sides and bottom of mixing bowl with spatula. Mix again until light and fluffy (approx 3 minutes).
4. Pour mixture into prepared pan(s). Bake until toothpick inserted in center comes out clean (approx 30 minutes for 9" rounds or 40 minutes for 9"x13" pan). Baking times may vary with different appliances.
5. Let cool in pan for approx 3-5 minutes. Carefully remove cake(s). Cool cakes completely before frosting.

I am so grateful to have found this product. I was able to bake my four year old a birthday cake. She loves this cake mix! I used the flaxseed recipe found on the product's website. It doesn't taste exactly like a regular cake, but it has a good flavor.

Before celiac changed my life, I was an instant mix kind of person. So, I was a little daunted by what seemed to me to be complex instructions for this mix. However, I have to say this mix is so fantastic, rich, moist, delicious, that my non-celiac children ask for it for their birthday cakes.

I am so grateful for this line of products! I was diagnosised with all these allergies, sugar, wheat and gluten, and was sad that I has to eliminate all these yummy foods. But when I found this product I was thrilled, made it with Agave and none of my friends I made it for knew the difference. They all raved about it! Thank you 1, 2, 3 Gluten Free!

This cake mix was very easy to prepare. To give this a little more flavor, I added half a teaspoon of almond extract. I was really good. The bread does tend to be dry at room temperature, but if you pop it in the microwave for a few seconds, the bread gets soft again. I totally recommend this mix.

I used this cake mix to make my daughter cup cakes. I used an egg replacement with the mix. Very easy to follow directions. I recommend this product and I will purchase it again.
