We love it when the mixed baskets of paste tomatoes, including prized San Marzanos arrive at our farmer coop. We kept their flavor (and dignity) by leaving the skins on. But made it easy to peel off if you like yours in the buff. Then we added, well, nothing because you are the one cooking and we want to stay out of your way and we took the liberty of canning them the old-fashioned way-without the can.
